You already know that I am a huge fan of creamy soups and that I also love mushrooms, so this combination is amazing for me! I was inspired by this recipe I found here and immediately decided to make it myself. As most creamy soups this creamy mushroom soup is a very easy recipe, ready in less than half an hour so you won’t spend a lot of time in the kitchen.

The crispy flavorful baguettes go perfectly with this creamy mushroom soup. You can also try croutons. This creamy mushroom soup recipe can also be vegan, just skip the yoghurt part. The taste will be pretty much the same.

Yogurt is great for garnish as it creates a lovely contrast and it also makes the mushroom soup whiter. I used homemade kefir which is healthy if you don’t use UHT and use only natural, hormone-free milk. If you want to know more about milk kefir I found this useful article here.

Creamy Mushroom Soup with Thyme

This is a French inspired, vegetarian, creamy mushroom soup recipe, made healthier!


  • 1,5L water
  • 1 medium celery root, peeled and cut in chunks
  • 1 medium onion, peeled and quartered
  • 300-350g Champignon/Portobello mushrooms, cut in chunks, stems removed
  • 1 potato, peeled and cut in chunks
  • 1 medium parsley root, cut in chunks
  • sea salt, to taste
  • ground pepper, to taste
  • sour cream, yoghurt - optional (I used homemade kefir)
  • some parsley, for garnish
  • For baguettes:
  • 1 baguette, sliced
  • thyme
  • 3-4 garlic cloves, mashed
  • 1 tbsp olive oil
  • sea salt


  1. Bring water to a boil in a large pot.
  2. Add celery and parsley root, onion, potato - all cut in chunks.
  3. Add salt and pepper to taste.
  4. Let them boil for about 15 minutes then add the mushrooms, cut in chunks.
  5. Boil for another 10 minutes and remove from heat.
  6. Meanwhile, preheat the oven at 400 F.
  7. Slice the baguette and brush each slice with some olive oil. Add some mashed garlic cloves on top of each slice and sprinkle with thyme and salt.
  8. Bake them for 15 minutes or until they're crisp.
  9. Now let's get back to the soup. Using a vertical blender, blend well until creamy. Add some yoghurt or sour cream if you want to make it whiter.
  10. Serve with parsley, sour cream and crisp baguette!

Cred ca deja stiti ca sunt innebunita dupa supele crema si ca de asemenea ador ciupercile, asa ca aceasta combinatie este extraordinara pentru mine! Sursa de inspiratie pentru aceasta reteta de supa crema de ciuperci am gasit-o aici si am decis imediat sa o incerc si eu. La fel ca toate celelalte supe crema facute de mine, si reteta asta de supa crema de ciuperci este extrem de usor de facut. Gata in jumatate de ora, supa crema de ciuperci merge de minune alaturi de crutoane aromate sau felii de paine prajita cu cimbru si usturoi. Aceasta reteta de supa crema de ciuperci poate avea si varianta vegana, tot ce trebuie sa faci este sa nu adaugi iaurt/smantana. Gustul nu va fi cu mult diferit. Mie mi-a iesit supa un pic cam inchisa la culoare pentru ca am folosit ciuperci champignon din acelea maronii. Alegeti niste ciupercute mai deschise la culoare. supa crema de ciuperci

Supa crema de ciuperci

Ingrediente pentru >6 portii:

  • 1,5L apa
  • 1 telina, curatata si taiata cubulete
  • 1 ceapa, maruntita
  • 300-350g ciuperci champignon, taiate cubulete si fara codite [ coditele le poti folosi pentru a face un delicios Pilaf cu ciuperci]
  • 1 cartof, curatat si taiat cubulete
  • 1 pastarnac, taiat felii
  • sare si piper dupa gust
  • smantana/iaurt [optional]
  • pantrujel

Pentru painea prajita:

  • 1 bagheta integrala, feliata
  • cimbru
  • 3-4 catei de usturoi, pisati
  • 1 Lg ulei de masline
  • sare


  1. Pune apa la fiert intr-o oala.
  2. Adauga telina, pastarnacul, ceapa si cartoful, taiate cubulete.
  3. Adauga sare si piper dupa gust si lasa-le sa fiarba vreo 15 minute.
  4. Adauga ciupercile si lasa-le la fiert inca 10 minute.
  5. Intre timp pre-incalzeste cuptorul la 200C si adauga feliile de paine unse cu ulei de masline si presarate cu usturoi, cimbru si sare.
  6. Lasa-le la prajit 15 minute.
  7. Supa e aproape gata. Ia-o de pe foc si folosind un blender vertical, paseaza legumele bine de tot pana cand capata o consistenta cremoasa.
  8. Adauga niste iaurt sau smantana [optional] si patrunjel proaspat maruntit.
