Una din retetele mele preferate de vara este clasica reteta italieneasca de bruscheta cu rosii si busuioc. In acest caz am adaugat otet balsamic si branza gustoasa. Este minunata pe post de gustare.

 Bruscheta cu rosii, busuioc si otet balsamic

Ingrediente:Savory Tomato & Basil Bruschetta with a Twist

Pentru 6 bruschete

• 6 felii de bagheta, prajite
• 12 bucati de branza bocconcini sau mozzarela (optional)
• o mana de frunze de busuioc proaspat, maruntite
• 6 rosii cherry, taiate cubulete
• 1 ceapa rosie, maruntita
• 2 catei de usturoi, pisati
otet balsamic
• ulei de masline
• sare si piper

Instructiuni:

Se prajesc usor ceapa rosie si usturoiul in putin ulei de masline. Atentie mare sa nu le ardeti.

Se amesteca apoi cu rosiile, frunzele de busuioc, sare, piper, putin ulei de masline si otet balsamic.

Se pune cam o lingura din acest amestec pe fiecare felie de bagheta si se poate servi alaturi de bilute de branza bocconcini sau mozzarela.

Se servesc imediat.

One of my favourite summery recipes is the classic Italian tomato and basil bruschetta. So here’s the recipe to mark the end of the season (although it’s not going to stop me from eating this throughout the year!). It’s great as a party snack, entree or quick and light meal.

Savory Tomato & Basil Bruschetta with Balsamic Vinegar

IngredientsSavory Tomato & Basil Bruschetta with a Twist

Serves 4-6

• 6 pieces of toasted baguette bread
• 12 pieces of small to medium bocconcini
• Handful of fresh basil leaves, torn or chopped
• 6 vine ripened tomatoes (any in season type), diced
• 1 red onion, diced
• 2 garlic cloves, crushed and chopped finely
• Balsamic vinegar
• Olive oil
• Salt & pepper

Directions:

Lightly fry red onions and garlic in a little bit of olive oil, do not brown.

Mix together tomatoes, chopped basil leaves, onion and garlic. Add salt and pepper, a dash of olive oil and balsamic vinegar to taste.

Scoop mix onto baguette bread, top with torn pieces of bocconcini, add more salt and pepper and balsamic vinegar if required.

Serve immediately so bread does not become soggy.
