Yum..yum..yum! I don’t cook many baked goodies because I don’t like all the strict measurements you have to keep, but I’m glad I made this awesome mushroom galette! Last week I visited the Mogosoaia Palace in Bucharest, and me and a couple of friends [non-vegs] had a wonderful picnic there!

The weather was just perfect and we ate lots of delicious foods :) Among those yummy things was this ricotta mushroom galette. It’s super easy to make, you’ll see! And this time I even got the dough right, perfect crispiness :D

Ricotta Mushroom Galette

Ricotta Mushroom Galette, perfect for an outdoor vegetarian picnic!

Ingredients

    For the dough:
  • 150g whole wheat flour
  • 50g cold butter
  • 1/4 glass of ice cold water
  • sea salt
  • For the filling:
  • 2 cups sliced mushrooms – I used button mushrooms
  • 1/2 cup white wine
  • 2 eggs, beaten
  • 1 cup ricotta cheese
  • 1 onion, chopped
  • a bunch of dill, chopped
  • 2 tsps dry thyme
  • salt and pepper, to taste

Instructions

  1. Add all dough ingredients in your food processor and blend them very well. If the dough is sticky, add more flour. The dough is just right when it is easy to mould and has an elastic consistency. When done, put it in the fridge for half an hour.
  2. Meanwhile, heat some olive oil in a large pan and saute the onion. Add mushrooms and white wine, and cover with a lid. Cook for 10 minutes. Remove the lid and add the remaining ingredients: chopped dill, beaten eggs, ricotta cheese, thyme, salt and pepper. Cook for another 2-3 minutes and remove from heat.
  3. Heat the oven at 200C/392F.
  4. Press the dough into a flat round disk and place it on an oven tray covered with a baking sheet.
  5. Add the filling right in the middle, leaving 1 1/2 inches clear around the edges. Fold the edges towards the center.
  6. Bake for 30-35 minutes.
  7. Serve hot with fresh sour cream on top!

Yum..yum..yum! Nu prea gatesc eu preparate cu faina/coca si alte derivate pentru ca nu imi place sa gatesc ‘matematic’, insa ma bucur ca am facut aceasta tarta rustica cu ciuperci! Acum o saptamana am fost la Mogosoaia la un picnic cu cativa prieteni [non-vegetarieni :)]. A fost super! Am prins o vreme tare frumoasa si am mancat numai bunatati.

Printre preparatele mancate s-a numarat si aceasta tarta rustica cu ciuperci si branza. Se face extrem de usor! Chiar m-am mirat ca mi-a iesit si blatul exact cum trebuie [de obicei dau gres la partea asta].

Blatul e facut din faina integrala si contine putine grasimi. De asemenea, nu am pus multa branza. Cantitatile de mai jos sunt pentru 4 persoane. Sper sa va placa! :)

Tarta rustica cu ciuperci si branza

Ingrediente pentru o tarta rustica cu ciuperci de 4 persoane:

Pentru blat:

  • 150g faina integrala
  • 150g faina integrala
  • 50g unt
  • 1/4 pahar cu apa rece
  • sare de mare

Pentru umplutura:

  • 2 cani cu ciuperci feliate
  • 1/4 cana cu vin alb
  • 2 oua
  • 1 cana cu urda
  • o ceapa, maruntita
  • o legatura de marar
  • 2 lg cimbru uscat
  • sare si pper, dupa gust

Instructiuni:

  1. Pune toate ingredientele pentru aluat in robotul de bucatarie si amesteca-le bine de tot. Se pot amesteca si manual. Daca aluatul este prea moale si lipicios, trebuie sa mai adaugi faina. Aluatul este gata atunci cand are o consistenta elastica. Se pune intrun bol si se lasa la rece jumatate de ora.
  2. Intre timp, incinge putin ulei de masline intr-o tigaie mai mare. Adauga ceapa maruntita si caleste-o cateva minute, apoi adauga si ciupercile. Adauga vinul alb si acopera cu un capac. Lasa la foc mic 10 minute.
  3. Da capacul la o parte si adauga restul ingredientelor, ouale batute, urda, mararul maruntit, cimbru, sare si piper. Lasa la foc mic inca 2-3 minute si apoi da-le deoparte.
  4. Incinge cuptorul la 200C.
  5. Scoate blatul din cuptor si da-i o forma rotunda. Aseaza-l intr-o tava tapetata cu hartie de copt si pune umplutura in centru. Ridica-i marginile astfel incat sa acopere putin umplutura.
  6. Lasa la cuptor 30-35 de minute.
  7. Se serveste fierbinte si merge de minune cu smantana proaspata pe deasupra!
