  • 250g red lentils
  • 5 garlic cloves, mashed
  • 1 onion, chopped
  • 2 medium carrots, sliced
  • 1 cup grated celery root
  • ½ peeled lemon, cut in 4
  • 2 Tbsps olive oil
  • water, enough to cover them
  • ½ tsp sweet paprika
  • sea salt, to taste
  1. Add red lentils, chopped onion, grated celery and sliced carrots in a pot.
  2. Add water just enough to cover them and bring to a boil over medium heat.
  3. Let them boil until tender (about 15 minutes).
  4. Remove from heat.
  5. Add the rest of the ingredients.
  6. Using a vertical blender, blend all ingredients together until the soup is smooth and creamy. Add more water until you reach the desired consistency.
