Serves: 4+
  1. Mix all chickpea croutons ingredients and place them on an oven tray lined with some parchment paper.
  2. Bake in the oven at 180C/375F for 15-20 minutes.
  3. Prepare the salad by simply mixing all salad ingredients together.
  4. Top with chickpea croutons and drizzle with tahini (optional).
