Vegan French Onion Soup

This vegan French onion soup is just as tasty as traditional French onion soup, with no taste and/or texture differences whatsoever! It's also really easy to make, with no special cooking skills or equipment needed.
Serves: 6+
  • 5 onions, julienned
  • 3 garlic cloves, chopped
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 1 cup blonde beer (or white wine)
  • 4 Tbsps olive oil
  • 2 Tbsps flour or cornstarch
  • 4 cups vegetable broth
  • salt and ground pepper, to taste
  • toast slices (1-2 / serving)
  • vegan cheese slices (1 / serving)
  1. Peel and thinly slice the onions.
  2. Heat the oil in a pot.
  3. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized, for about 25 minutes.
  4. Add the beer/wine, bring to a boil, reduce the heat and simmer until the wine has evaporated - about 5 minutes. Discard the bay leaves and thyme sprigs.
  5. Add the flour/cornstarch and stir. Turn the heat on medium-low. Cook for 5 minutes, while stirring.
  6. Add the veggie broth. Bring the soup back to a simmer, and cook for 10 minutes. Season, to taste, with salt and pepper.
  7. Add a slice of bread in a pan and toast it on one side without burning. Flip it on the other side and place a slice of vegan cheese on top and cover with a lid. Let it melt at low temp for 1-2 minutes.
  8. Serve hot, with the toast and cheese in the middle.
