Banana Oatmeal Cookies with Cranberries

Forget the sugary Christmas cookies and try these healthy, vegan, oatmeal cookies instead! They're extremely easy to make with just a few ingredients.
  • 3 bananas, very ripe
  • 2 cups quick-cooking oats
  • 1⁄2 cup dry cranberries
  • 1 teaspoon vanilla extract
  • ¼ cup oat milk
  • ½ teaspoon baking soda
  • some oil, for greasing the pan
  1. Preheat oven to 350F.
  2. In a bowl, mash bananas with a fork, then add oats, cranberries, baking soda, milk
  3. and vanilla.
  4. Cover an oven tray with some parchment paper then lightly grease it.
  5. Spoon about 1 tablespoon of cookie mixture for each cookie, or 2 if you want
  6. them larger.
  7. Bake them for 20-30 minutes.
