Gazpacho | Cold Soup Recipe
Here's how you can make the perfect gazpacho - a delicious and refreshing cold soup recipe perfect for hot Summer days!
Serves: 2+
  • 1 cucumber, chopped
  • ½ cup tomato juice
  • 6 large ripe tomatoes
  • ½ ripe avocado
  • ½ red bell pepper
  • 2 cloves garlic
  • 1 Tbsp lemon juice
  • ½ red onion
  • 3 Tbsp red wine vinegar
  • ½ tsp salt
  • black pepper. ground, to taste
  • 1 Tbsp olive oil
  • some chili powder, ground, to taste
  • fresh herbs, croutons and veggie sticks for serving
  1. Add the tomato juice, tomatoes, red bell pepper, avocado, cucumber, onion, garlic and lemon juice, in a blender and blend until perfectly smooth.
  2. Add the rest of the seasonings: olive oil, salt, chili, pepper, and vinegar and blend again.
  3. Press the mixture through a strainer especially if you don't have a high-power blender. We want this to be extra-smooth.
  4. Pour into a glass jar and cover. Chill in the fridge for a few hours or overnight.
  5. Before serving, shake the jar. Pour into bowls, and garnish with toppings such as chopped cucumbers, avocado, cherry tomatoes, croutons.
