Vegan Dulce de Leche

Serves: ~250ml dulce de leche
  1. In a medium pot, combine the coconut milk and sugar.
  2. Heat the pot over medium heat and whisk until the sugar dissolves.
  3. Add a pinch of salt and the vanilla extract. Continue to whisk.
  4. Add tapioca flour/starch, sifted, and whisk to combine.
  5. Increase the heat until the liquid comes to a boil. Lower the heat afterward.
  6. Let it boil for 20 minutes on low heat while stirring occasionally.
  7. Let it cool and serve or store in the fridge.
