Serves: 6+
  • 1 Tbsp oil, for brushing
  • 1 Tbsp vegan milk of choice, for brushing
  • 1 Tbsp brown sugar, for topping
  • 2-3 Tbsp all-purpose flour, for dusting
  • For the filling:
  • 5 green apples, peeled and sliced
  • ¾ cup brown sugar
  • ½ cup flour
  • ¼ cup lemon juice
  • 1 tsp cinnamon
  • ½ tsp cardamon
  • ⅓ tsp anise powder
  • ⅓ tsp allspice
  • ¼ tsp nutmeg
  • ¼ sea salt
  • For the dough:
  • 18 Tbsp chilled vegan butter
  • 2 ½ cups all-purpose flour
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1 tsp apple cider vinegar
  • 10 Tbsp ice water
  1. First, make the dough:
  2. Put the flour, butter, sugar, salt, and vinegar into a mixing bowl and mix until incorporated. Add the ice-cold water step by step while mixing, until the dough forms a ball.
  3. Knead the dough by hand on a lightly floured surface. Form a ball, cover with plastic wrap and refrigerate for 1 hour.
  4. Meanwhile, make the filling.
  5. In a large bowl, add all the filling ingredients and give it a stir to mix well. Set aside.
  6. Preheat oven to 180C.
  7. Brush a pie pan with a little oil. Set aside.
  8. Use half of the dough to form a disk by rolling it on a floured surface with a rolling pin. To make the process easier, lightly flour the top of the dough and the rolling pin.
  9. Place it in the pie pan and remove the extra edges.
  10. Fill it with the apple mixture and spread it evenly on the pie crust.
  11. To make a top layer, knead the second part of the dough to form another disk.
  12. Cut it in strips with a sharp knife.
  13. Arrange the dough strips on top of the pie using your favorite design.
  14. Fix the edges with a fork.
  15. Brush it with a little vegan milk and sprinkle with some brown sugar.
  16. Bake for about 45 minutes or until golden on top.
