Vegan Mushroom Pot Pies

Serves: 4
  • 1 Tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • ½ cup red bell pepper, chopped
  • ½ cup yellow bell pepper, chopped
  • ½ cup green bell pepper, chopped
  • ½ frozen peas
  • 1 cup sliced button mushrooms
  • 1 cup veggie broth
  • 1 cup almond milk
  • 3 Tbsp flour
  • 2 sprigs thyme
  • 2 tsp chopped fresh rosemary leaves
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 sheet puff pastry, 4 circles cut of (size of your ramekins)
  • 2 Tbsp non-dairy milk
  • 2 Tbsp black sesame
  1. Preheat the oven to 200 C
  2. Heat a skillet on medium heat with olive oil.
  3. Add the chopped onion, garlic and sautee until translucent, for about 4 minutes.
  4. Add the mushrooms and cook, stirring, for about 5 minutes.
  5. Add the bell peppers and continue to cook for 4 more minutes.
  6. Sprinkle the flour over the veggies and cook, stirring, for about 2 more minutes.
  7. Add the broth and mix.
  8. Stir in the peas. Add the thyme, rosemary, black pepper and salt. Stir in the milk.
  9. Cover and let it cook on low for about 7 minutes or until the mixture is thick.
  10. Divide the mixture between 4 ramekins. Cover with puff pastry, brush with milk and sprinkle with black sesame.
  11. Let it cook in the oven for about 35 minutes or until the tops are golden.
