Best Smashed Avocado Toast - 3 ways!
Today we're going to talk about everybody's favorite breakfast: avo toast! Here are 3 unique and delicious ways of making smashed avocado toast. Let's find your favorite!
  • For the base of the avocado toast:
  • 2 avocado, peeled and pitted
  • a splash of lime juice
  • 1 tsp olive oil
  • a pinch of salt
  • 3 slices whole grain bread
  • Toppings:
  • #1 - With Tomatoes and Basil Pesto
  • ½ plum tomato, sliced
  • 1 Tbsp fresh basil pesto
  • 1 tsp crushed garlic
  • #2: with Chickpea and Parsley
  • 1 tsp olive oil
  • 1 clove garlic
  • 1 Tbsp chickpeas
  • 1 Tbsp chopped parsley
  • a pinch of ground cumin
  • a pinch of black pepper
  • #3: with Tofu Crumbles
  • 1 Tbsp smoked tofu crumbs
  • 1 Tbsp red watercress
  • ½ tsp smoked paprika
  • a pinch red hot pepper
  1. To assemble the toast:
  2. Add the avocado, lime juice, olive oil and salt to a medium bowl.
  3. Mash the avocado with a fork and combine all the ingredients.
  4. Heat a skillet on high heat, add the bread slices on a dry skillet and let them toast 2 minutes per side, or until dry and crispy.
  5. Toppings:
  6. Take the first slice of bread, top with 1 Tbsp of mashed avocado, crushed garlic, tomato slices, and pesto
  7. Take the second slice of the toast and brush it with olive oil. Cut a garlic clove in halves and rub the sides of your toast with the cut side of the garlic. Top it with 1 Tbsp avocado mash, chickpeas, ground cumin, and black pepper.
  8. Take the third slice of toast. Top with the last Tbsp of avocado mash, tofu crumbs, watercress and sprinkle with smoked paprika and red pepper.
