Serves: 4
  • For the base:
  • 1 Tbsp olive oil
  • 2 cups vegetable broth
  • 1 large potato, chopped
  • 1 white onion, chopped
  • ¼ chopped celery
  • 1 stalk green celery, chopped
  • ½ cup coconut cream
  • 4 cloves garlic, peeled and minced
  • 1 Tbsp white chili seasoning
  • For the filling:
  • white beans, drained
  • jalapeño slices, drained - to taste
  • ½ cup green peas
  • ¾ cup chopped white onion
  • 1 cup corn, cooked
  • 1 red chili, sliced
  • For serving:
  • a lime wedge
  • cilantro
  • chopped fresh mint
  1. Heat a large pot on medium heat. Add the olive oil, garlic, and onion. Sautee until fragrant.
  2. Add the potato, celeries, and chili seasoning and sautee for about 3 minutes.
  3. Pour in the broth and simmer for about 7 minutes.
  4. Add the veggies to the food processor and blend until smooth.
  5. Add the coconut cream and pulse a few more times to combine.
  6. Return the mixture to the heat. Add all the filling ingredients and bring to a boil.
  7. Turn the heat off, cover and let sit for about 10 minutes.
  8. Serve with lime wedges, fresh cilantro, and fresh mint. Enjoy!
