Vegetarian Irish Stew

Are you cold? Do you look for something to warm you up from the inside? Here's how to make the best vegetarian Irish stew, it's extremely easy!
Serves: 3
  • 3 medium potatoes, chopped
  • 2 carrots, chopped
  • 2 bell peppers, chopped
  • 150 g mushrooms, chopped
  • 1 big golden onion, chopped
  • ¼ celery root, sliced
  • 3 garlic cloves, chopped
  • ½ medium fresh chili pepper, finely chopped
  • 2 Tbsp tomato paste
  • 400 ml veggie broth
  • 2 Tbsp olive oil
  • 2 Tbsp flour
  • oregano
  • fresh parsley
  • salt and pepper to taste
  1. Heat the olive oil in a pot on medium heat. Add the chopped garlic and onion.
  2. Once golden and translucent, add 2 Tbsp of flour and fry for about 30 sec.
  3. Add the rest of the veggies. Season with oregano, salt and black pepper.
  4. Fry, stirring occasionally until the vegetables develop a bit of color (5-7 min).
  5. Add 2 Tbsp of tomato paste and fry for another minute before adding the veggie broth (until it barely covers your vegetables).
  6. Once boiling, reduce the heat to low and simmer for about 15-20 min or until potatoes and carrots are fully cooked through.
  7. Garnish with freshly chopped parsley.
