  • 800g vegan puff pastry
  • 2 cups tofu, crumbled
  • 2 cups spinach
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • olive oil
  • oregano
  • salt
  • pepper
  1. Heat up 1-2 Tbsp of olive oil over medium heat.
  2. Fry the minced garlic and chopped onion.
  3. When translucent, add the crumbled tofu and cook for 3-5 minutes.
  4. Add the spinach and season with salt, pepper, and oregano. Cook for 1 additional minute and let cool.
  5. Cut the pastry into squares (about 10 x 10 cm). Place 1 - 1,5 Tbsp of the tofu mixture on each square and pinch shut folding it like an envelope.
  6. Bake at 180 degrees Celsius for about 30 minutes.
