Le servesc cu un sos de usturoi, fie cel vegan cu rosii pasate, fie cel cu iaurt grecesc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta de vinete umplute a fost facuta initial de mama mea si de atunci o fac. E unul dintre acele preparate care raman in familie: am invatat-o privind-o pe ea cum scobeste vinetele si nu arunca nimic, pentru ca miezul scos se intoarce in compozitie. Asa am ajuns sa o gatesc si eu, an dupa an, fara sa mai am nevoie de retete scrise.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place pentru ca e o reteta fara risipa si fara pretentii: vinete mici, ciuperci, putin orez si verdeata din belsug. Cele doua sosuri de usturoi sunt cele care fac diferenta &#8212; unul vegan, cu rosii pasate, celalalt cu iaurt grecesc, mai cremos. ciupercile si orezul tin de foame.<\/li>\n<li><strong>O masa care foloseste vinete mici<\/strong>, exact cele care prisosesc vara, cand piata e plina de vinete marunte.<\/li>\n<li><strong>Un preparat la cuptor pe care il lasi nesupravegheat<\/strong> &#8212; dupa ce le acoperi cu folie, ai 40 de minute libere.<\/li>\n<li><strong>O reteta fara risipa<\/strong>, in care pana si miezul scos din vinete intra in umplutura.<\/li>\n<li><strong>O masa care merge gatita din timp<\/strong> si servita calda sau la temperatura camerei, cu sosul de usturoi adaugat la final.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Umplutura consistenta, fara carne.<\/strong> Ciupercile Champignons sotate aduc gustul savuros, iar orezul fiert leaga totul intr-o compozitie care satura.<\/li>\n<li><strong>Doua sosuri din care alegi.<\/strong> Cel vegan, cu usturoi si rosii pasate, sau cel cu iaurt grecesc, mai cremos &#8212; acelasi preparat, doua personalitati.<\/li>\n<li><strong>Zero risipa.<\/strong> Miezul scobit din vinete se paseaza si se intoarce in umplutura, asa ca nu arunci nimic.<\/li>\n<li><strong>Se face cu ingrediente simple.<\/strong> Vinete, ciuperci, orez, morcov, ceapa si verdeata &#8212; aici conteaza marimea. Vinetele mici, taiate pe lungime in jumatate, se scobesc usor si se coc uniform in cele 40 de minute. La cumparare alege-le ferme, grele pentru dimensiunea lor si cu pielita lucioasa; cele moi sau cu pete maronii au stat prea mult si pot fi amare. Miezul scos nu se arunca: se paseaza si intra inapoi in umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci Champignons<\/strong> &#8212; sunt baza savuroasa a umpluturii. Taie-le marunt si nu le spala sub jet de apa, ci sterge-le cu un servet umed, pentru ca ciupercile absorb apa si apoi fierb in loc sa se rumeneasca. La sotare lasa-le sa elimine intai lichidul si abia apoi se coloreaza si capata gust &#8212; de aici vine aroma de &#8220;umami&#8221; a umpluturii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez fiert<\/strong> &#8212; in reteta se foloseste orez fiert separat in prealabil, adaugat in umplutura. Fierbe-l doar pana e al dente, fiindca isi mai continua gatitul la cuptor; un orez prea moale de la inceput se transforma in pasta. O treime de cana fiert este suficient cat sa lege compozitia fara sa o ingreuneze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcov si ceapa<\/strong> &#8212; morcovul ras aduce dulceata si culoare, iar ceapa maruntita formeaza baza aromata. Soteaza ceapa pana devine translucida inainte de a adauga restul, ca sa-si piarda gustul crud si intepator.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel si marar<\/strong> &#8212; verdeata proaspata, tocata, se adauga spre finalul sotarii ca sa-si pastreze aroma si culoarea. Daca le pui prea devreme, caldura le ofileste si pierd parfumul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; intra in ambele sosuri, pisat. Pentru un sos cat mai aromat foloseste catei tari, fara coltul verde din mijloc, care da amareala. Patru catei pe sos pot parea mult, dar usturoiul crud pisat se asaza dupa cateva minute de odihna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt grecesc<\/strong> &#8212; pentru sosul cremos. Cel grecesc e mai gros si mai bogat decat iaurtul obisnuit, asa ca sosul nu se subtiaza. Amesteca-l cu usturoiul pisat si sarea chiar inainte de servire, ca sa ramana proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii pasate<\/strong> &#8212; pentru sosul vegan se scobeste doar miezul a trei rosii si se paseaza. O lingurita cu margine ascutita merge cel mai bine.<\/li>\n<li><strong>Lasa ciupercile sa-si elimine apa.<\/strong> Greseala cea mai des intalnita e umplutura apoasa: soteaza ciupercile la foc mediu-mare pana lichidul scade complet si abia apoi le simti aroma rumenita.<\/li>\n<li><strong>Acopera tava cu folie de aluminiu.<\/strong> Folia tine aburul inauntru si gateste vinetele uniform, fara sa se usuce umplutura. Le poti pregati din timp: umple jumatatile de vanata, tine-le acoperite la rece si coace-le abia inainte de masa. Sosurile de usturoi se fac separat si se adauga proaspete, la servire &#8212; mai ales cel cu iaurt grecesc, care e cel mai bun facut pe loc. Vinetele deja coapte se pastreaza 3-4 zile la rece, intr-un recipient inchis, si se reincalzesc acoperite cu folie ca sa nu se usuce.
