Ador ceapa in mancare, asa ca prazul, fiind ruda apropiata din aceeasi familie, este si el favoritul meu. Maslinele negre si vinul alb ii dau acestei retete o aroma speciala, iar faptul ca se gateste aproape de la sine, sub capac, o face perfecta pentru o zi cu treaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi amintesc prima oara cand am facut mancare de praz cu masline: a iesit super la gust, dar din pacate pe alocuri nu am curatat bine prazul si s-a cam simtit nisipul intre dinti. De atunci am invatat lectia, asa ca mai jos iti spun exact cum cureti prazul ca sa nu pati si tu acelasi lucru. E singura parte mai migaloasa a retetei, restul e copilarie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li>o mancare de post sau vegana, fara ingrediente de origine animala, care satura si nu lasa senzatia de gol<\/li>\n<li>un preparat economic, facut din cateva ingrediente ieftine pe care le gasesti tot anul<\/li>\n<li>o reteta care se gateste aproape singura, sub capac, cat tu vezi de alte treburi<\/li>\n<li>o garnitura aromata, usor sarata de la masline, care merge servita calda, la temperatura camerei sau rece<\/li>\n<li>o idee buna de primavara, cand prazul e inca proaspat si dulce<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li><strong>Aroma de vin alb si masline<\/strong> transforma un praz banal intr-un preparat cu caracter, cu gust adanc si usor sarat, departe de orice mancare fada de post.<\/li>\n<li><strong>Se gateste singura.<\/strong> Dupa ce ai calit ceapa si ai pus prazul sub capac, nu mai ai decat sa verifici din cand in cand daca mai trebuie apa. Cand il cumperi, alege fire ferme, cu partea alba lunga si groasa si frunzele verzi vii, nu ingalbenite sau ofilite. Partea alba si verde-deschis e cea pe care o folosesti; verdele inchis de la varf e prea fibros si amar. Cel mai important: prazul aduna nisip si pamant chiar intre straturile lui, asa ca taie-l intai si abia apoi spala-l bine sub jet de apa, desfacand straturile cu degetele. Eu, dupa ce am simtit nisip o data, il las acum cateva minute intr-un bol cu apa rece dupa ce l-am taiat &#8212; pamantul se aseaza la fund si prazul ramane curat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Masline negre<\/strong> &#8212; 100 g, feliate sau intregi, fara samburi. Ele aduc sarea si profunzimea preparatului, asa ca aici merita sa iei masline bune, nu cele moi si fade de la borcanul ieftin. Daca folosesti masline foarte sarate, gusta inainte sa mai adaugi sare in mancare, ca sa nu o strici. Le pui spre final, cu restul ingredientelor, ca sa nu se faca amare de la fierberea indelungata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; o ceapa maruntita, calita prima in ulei. Ea e baza de aroma a intregului preparat. Tine-o la foc mediu cca 5 minute, pana devine translucida si incepe sa miroasa dulceag, nu pana se rumeneste tare &#8212; vrei sa fie moale si dulce, nu arsa si amara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb<\/strong> &#8212; jumatate de pahar. Adauga aciditate si o aroma fina care ridica tot preparatul. Foloseste un vin alb sec pe care l-ai bea si din pahar; alcoolul se evapora la fiert si ramane doar parfumul. Daca nu vrei deloc vin, citeste mai jos la substitutii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate<\/strong> &#8212; o lingura. Da culoare, un strop de aciditate si leaga gusturile. O adaugi spre final, odata cu maslinele si verdeata. Daca o calesti un minut in sucul din cratita inainte sa amesteci tot, isi pierde gustul crud si devine mai dulce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Marar si patrunjel<\/strong> &#8212; cate o legatura mica din fiecare, tocate marunt. Verdeata proaspata se pune la final, ca sa ramana vie si aromata. Mararul merge surprinzator de bine cu prazul si maslinele, asa ca nu-l omite &#8212; el da prospetimea care echilibreaza gustul sarat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li><strong>Curata prazul ca lumea.<\/strong> Greseala mea de la prima oara: nu l-am spalat destul de bine si s-a simtit nisipul intre dinti. Taie-l intai si apoi spala-l bine, desfacand straturile, sau lasa-l cateva minute in apa rece. Merita cele doua minute in plus.<\/li>\n<li><strong>Nu grabi prazul.<\/strong> Are nevoie de 30-40 de minute la foc mediu, sub capac, ca sa se inmoaie cum trebuie. Stii ca e gata cand firele sunt moi si translucide si se desfac usor cu furculita, nu cand mai au &#8220;coloana vertebrala&#8221;.<\/li>\n<li><strong>Verifica apa din 10 in 10 minute.<\/strong> Prazul lasa apa, dar nu intotdeauna destula. Daca vezi ca s-a lipit sau ca incepe sa se prinda de fundul cratitei, adauga cateva linguri de apa si amesteca. Vrei sa se inabuse, nu sa se prajeasca.<\/li>\n<li><strong>Gusta inainte de a sara.<\/strong> Maslinele aduc multa sare deja, asa ca pune sarea la final si numai dupa ce ai gustat. E mult mai usor sa adaugi sare decat sa o scoti.<\/li>\n<li><strong>Lasa-l sa se odihneasca.<\/strong> Ca multe mancaruri inabusite, prazul cu masline e si mai bun a doua zi, dupa ce gusturile s-au asezat. Pierzi putin din complexitate, dar pastrezi aciditatea care echilibreaza dulceata prazului.<\/li>\n<li><strong>Alt tip de masline:<\/strong> maslinele Kalamata sau cele verzi merg la fel de bine; fiecare aduce alt gust. Daca le iei mai sarate, ajusteaza sarea din mancare in consecinta.<\/li>\n<li><strong>Mai consistent:<\/strong> adauga cateva felii de cartof sau o mana de naut fiert odata cu prazul, ca sa transformi garnitura intr-un fel principal mai satios.<\/li>\n<li><strong>Mai multa verdeata:<\/strong> daca iti place mararul, dubleaza-l. Merge excelent cu prazul si maslinele si da un plus de prospetime.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mancarea de praz cu masline se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile, si chiar castiga in gust a doua zi, dupa ce aromele s-au asezat. O poti manca rece direct din frigider, la temperatura camerei sau reincalzita usor la foc mic, cu un strop de apa daca s-a ingrosat prea tare. Se preteaza si la preparat in avans: fa-o dimineata sau cu o zi inainte si ai garnitura gata pentru o masa rapida. Pentru congelare, o poti tine pana la 2 luni, insa textura prazului devine mai moale dupa decongelare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac mancarurile de post simple si aromate ca aceasta, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-fasole-cu-tarhon\/\">mancarea de fasole cu tarhon<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-cartofi-si-morcovi-cu-tarhon\/\">mancarea de cartofi si morcovi cu tarhon<\/a>. Iar daca te-au cucerit maslinele, arunca un ochi si pe <a href=\"https:\/\/gourmandelle.com\/ro\/fasole-batuta-cu-masline-kalamata\/\">fasolea batuta cu masline Kalamata<\/a> &#8212; o alta reteta in
