Se asaza gustul acrisor cu otet, iar frunzele de telina sau leustean adauga la final prospetimea. Se serveste cald sau rece, in orice sezon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am facut prima oara borsul asta intr-o zi rece de toamna, cand ma cam deprima vremea, asa ca am decis sa imi fac o ciorba calda care sa imi incalzeasca sufletul si sa ma uit toata ziua la filme bune. De atunci a ramas reteta mea de suflet pentru zilele in care vreau ceva cald, colorat si simplu, fara carne si fara complicatii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place pentru ca e una dintre cele mai oneste ciorbe pe care le stiu: cateva legume de toamna, putin otet, niste verdeata si atat. Cauta sfecle tari, grele in mana si fara pete moi sau zbarcituri pe coaja: cele mici si medii sunt de regula mai dulci si mai putin fibroase decat cele foarte mari. Daca o dai pe razatoare in loc sa o tai cubulete, isi lasa mai repede culoarea si gustul in zeama. Poarta un sort sau spala-ti mainile imediat, pentru ca pateaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovul<\/strong> dat pe razatoare aduce o dulceata blanda care rotunjeste aciditatea otetului. Alege morcovi fermi, cu culoare vie; cei moi sau cu varful inverzit au stat prea mult si pot avea gust amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> este baza de gust a ciorbei. O sotezi la inceput in ulei ca sa-si piarda din asprime si sa devina dulceaga; nu o lasa sa se rumeneasca prea tare, ci doar pana se inmoaie si devine translucida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Telina<\/strong> data pe razatoare aduce parfumul acela usor picant si pamantiu specific ciorbelor de la noi. Cauta un radacinoid ferm, fara portiuni moi sau goale in interior. Daca nu ai telina radacina, frunzele de telina folosite la final acopera o buna parte din aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul<\/strong> da nota acra care defineste un bors. Adauga-l treptat si gusta pe parcurs, pentru ca taria difera de la un otet la altul: vrei sa simti aciditatea, dar nu sa acopere dulceata sfeclei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Frunzele de telina sau de leustean<\/strong> se pun la final, dupa fierbere, ca sa-si pastreze aroma proaspata si culoarea verde. Daca le fierbi mult, isi pierd din parfum, asa ca le adaugi spre sfarsit, cand ciorba e aproape gata.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Da sfecla pe razatoare daca vrei culoare intensa.<\/strong> Cu cat bucatile sunt mai mici, cu atat sfecla isi cedeaza mai repede pigmentul si zeama iese mai rubinie. Cubuletele mici tin mai bine textura, razatoarea da o ciorba mai colorata.<\/li>\n<li><strong>Pune otetul la sfarsit si gusta.<\/strong> O greseala frecventa e sa torni tot otetul deodata. Adauga-l treptat dupa ce legumele au fiert si potriveste pana cand simti acrisorul echilibrand dulceata sfeclei.<\/li>\n<li><strong>Soteaza ceapa fara sa o arzi.<\/strong> Stii ca e gata cand devine translucida si miroase dulce, nu cand se inegreste. Ceapa arsa lasa un gust amarui in toata ciorba.<\/li>\n<li><strong>Adauga verdeata abia la final.<\/strong> Frunzele de telina sau leustean isi pierd aroma daca fierb mult. Leusteanul da o aroma mai intensa si mai romaneasca, frunzele de telina una mai delicata: foloseste ce ai la indemana.<\/li>\n<li><strong>Otet inlocuit cu zeama de lamaie sau bors.<\/strong> Daca preferi, poti da nota acra cu zeama de lamaie sau cu bors de putina, in loc de otet. Ajusteaza cantitatea dupa gust, pentru ca taria difera.<\/li>\n<li><strong>Versiune mai consistenta.<\/strong> Pentru o ciorba care satura mai mult, poti adauga cartofi taiati cubulete sau putin orez, fierte impreuna cu restul legumelor.<\/li>\n<li><strong>Serveste rece, ca borsul rece de vara.<\/strong> In zilele calde, las-o sa se raceasca bine si serveste-o rece: sfecla rosie merge minunat si asa, ca o supa racoritoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Borsul de sfecla rosie se pastreaza foarte bine la frigider, in recipient inchis, 3-4 zile, iar gustul devine chiar mai rotund a doua zi, dupa ce aromele se asaza. Il poti incalzi usor pe aragaz sau il poti servi rece direct din frigider, in functie de pofta si de vreme. Se congeleaza si el bine: pune-l in portii, lasa loc de dilatare in recipient si decongeleaza-l peste noapte la frigider inainte sa-l reincalzesti. Adauga verdeata proaspata la servire, dupa decongelare, ca sa-si recapete prospetimea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac ciorbele acre vegane, mai incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-frunze-de-sfecla\/\">ciorba de frunze de sfecla<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-perisoare-vegana\/\">ciorba de perisoare vegana<\/a>. Iar daca vrei sa folosesti sfecla rosie si altfel, arunca un ochi pe <a href=\"https:\/\/gourmandelle.com\/ro\/limonada-roz-sfecla-ghimbir\/\">limonada roz cu sfecla si
