Este reteta mea preferata de pilaf: putine ingrediente, fara batai de cap si cu un orez care iese de fiecare data umflat si aromat, fara sa il arzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta de <strong>pilaf cu ciuperci<\/strong> este una dintre retetele mele preferate. Pe cat e de simpla, pe atat e de gustoasa, iar metoda pe care o folosesc eu este atat de usoara incat nu necesita mult efort si nici nu trebuie sa stau cu ochii pe cratita. O poti aplica pentru orice tip de pilaf de orez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De obicei mananc pilaful cu ciuperci alaturi de o portie zdravana de patrunjel proaspat tocat. Imi place sa pastrez orezul lipicios si moale, asa cum iese pilaful in versiunea lui europeana, nu cu boabele separate. Eu prefer orezul cu bob rotund pentru ca elibereaza mai mult amidon si da pilafului acea textura lipicioasa, cremoasa, specifica versiunii europene. Daca vrei boabele separate, ai nevoie de un orez cu bob lung precum basmati, dar pentru reteta asta nu e ce cauti. Important: pune orezul la inmuiat in apa cu cel putin o ora inainte. Inmuierea hidrateaza bobul, scurteaza timpul de fierbere si ajuta orezul sa se gateasca uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci Champignon<\/strong> &#8212; folosesc 250 g de ciuperci Champignon feliate. Cand le cumperi, alege ciuperci ferme, cu palaria inchisa si fara pete maronii sau umede &#8212; acestea sunt cele proaspete. Nu le spala sub jet de apa, pentru ca ciupercile absorb apa ca un burete; sterge-le doar cu un servet umed sau cu o perie. Feliaza-le egal ca sa se gateasca in acelasi ritm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; o ceapa mare, maruntita, da baza dulce-aromata a pilafului. Cu cat o tai mai marunt, cu atat se topeste mai bine in orez si nu vei da peste bucati tari. Calita la inceput impreuna cu ciupercile, ceapa isi pierde gustul intepator si devine dulceaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de floarea soarelui<\/strong> &#8212; o singura lingura este suficienta pentru a cali ceapa si ciupercile. Are un gust neutru, asa ca nu acopera aroma ciupercilor. Lasa-l sa se incinga bine inainte de a adauga legumele, ca sa caleasca, nu sa fiarba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa<\/strong> &#8212; 2 \u00bd cani de apa la o cana de orez. Raportul corect de lichid este cheia unui pilaf reusit: prea putin si orezul ramane crud, prea mult si devine terci. Foloseste aceeasi cana cu care ai masurat orezul, ca sa pastrezi proportia exacta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare si piper<\/strong> &#8212; sare dupa gust si \u2153 de lingurita de piper macinat. Sareaza spre finalul fierberii si gusta inainte de a opri focul, pentru ca lichidul se concentreaza pe masura ce scade si gustul se intensifica.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste inmuierea orezului.<\/strong> Cele 60 de minute de inmuiere fac diferenta: orezul se fierbe uniform si mai repede. Greseala cea mai des intalnita este sa pui orezul direct, neinmuiat &#8212; atunci ai nevoie de mai mult timp si de mai multa atentie.<\/li>\n<li><strong>Lasa lichidul sa dea bine in clocot inainte de a reduce focul.<\/strong> Dupa ce ai adaugat apa, asteapta clocotul, apoi lasa orezul sa fiarba 20 de minute. Asa pornesti corect procesul de absorbtie.<\/li>\n<li><strong>Pasul cu capacul este secretul.<\/strong> Cand opresti focul, acopera cratita cu un capac si las-o asa cateva minute. Orezul absoarbe restul de lichid din aburul propriu si se umfla singur, fara sa il arzi.<\/li>\n<li><strong>Stii ca e gata cand<\/strong> tot lichidul a fost absorbit, iar boabele sunt moi si lipicioase, fara apa libera in cratita. Eu trec de obicei peste asta pentru ca imi place pilaful meu lipicios.<\/li>\n<li><strong>Mai multa aroma.<\/strong> Poti adauga un catel de usturoi tocat cand calesti ceapa sau cateva fire de cimbru, pentru un plus de gust.<\/li>\n<li><strong>Verdeata la final.<\/strong> Eu il servesc mereu cu mult patrunjel proaspat tocat deasupra; merge la fel de bine si cu marar sau ceapa verde.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pilaful cu ciuperci se pastreaza foarte bine la frigider, intr-un recipient inchis ermetic, 3-4 zile. Pe masura ce sta, orezul se mai intareste putin, asa ca atunci cand il reincalzesti adauga cateva linguri de apa si incalzeste-l acoperit, la foc mic sau la microunde, ca sa isi recapete textura moale. Il poti pregati cu cateva ore inainte de masa si il reincalzesti la nevoie. Daca vrei sa il congelezi, lasa-l sa se raceasca complet, apoi pune-l in pungi sau caserole; rezista pana la o luna in congelator.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta reteta, gasesti mai multe idei in colectia mea de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-orez\/\">retete cu orez<\/a>.
