Mamaliga e gata in mai putin de 30 de minute, cand incepe sa se desprinda de pe peretii vasului. Optional, adaugi putin unt la final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta este reteta traditionala de mamaliga, facuta ca la mama acasa, iar mie mi se pare una dintre cele mai usoare retete posibile. Nu stiu de ce se tot zice ca testul suprem al soacrei e sa o puna pe nora sa faca mamaliga &#8212; mie din prima mi-a iesit, chiar nu e mare filosofie. Secretul nu sta in vreun tertip ascuns, ci in rabdare: presari malaiul incet, in ploaie, si nu te opresti din amestecat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sfatul meu simplu pentru o mamaliga reusita ramane mereu acelasi: &#8220;Sa ai rabdare!&#8221;. Daca torni tot malaiul deodata, te trezesti cu cocoloase si cu o textura granuloasa. Daca il lasi sa cada in fir subtire peste apa care clocoteste si amesteci constant, iese fina, cremoasa si fara nicio asperitate. Cauta un malai cu granulatie medie, nici prea fin (iese o mamaliga cleioasa, fara textura), nici prea grosier (ramane aspra si cere fiert mai mult). Eu prefer malaiul pentru mamaliga, nu cel extra-fin pentru prajituri. Verifica data de pe pachet: malaiul vechi capata un gust usor ranced si amar, pentru ca grasimile din germene se oxideaza, asa ca ia cantitati pe care le folosesti relativ repede si tine-l intr-un loc racoros si uscat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa<\/strong> &#8212; raportul face totul. La 200 g malai folosesc 1 litru de apa pentru o mamaliga ferma, care se taie frumos cu ata sau cu un cutit. Daca o vrei mai cremoasa, mai poale, urci putin cantitatea de apa. E util sa ai mereu langa tine inca putina apa fierbinte: daca s-a ingrosat prea tare prea repede, o subtiezi controlat fara sa scazi temperatura din vas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare<\/strong> &#8212; se pune in apa, nu la final. Sarea adaugata de la inceput in apa de fiert patrunde uniform in toata mamaliga; pusa abia la sfarsit ramane la suprafata si gustul iese inegal. Eu gust apa inainte sa presar malaiul &#8212; trebuie sa fie placut sarata, ca o supa usoara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt (optional)<\/strong> &#8212; bonusul de final. O lingura de unt mestecata la sfarsit aduce o catifelare si un luciu frumos. Nu e obligatoriu, iar daca vrei varianta vegana, il lasi deoparte sau il inlocuiesti cu unt vegetal &#8212; mamaliga ramane la fel de buna.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Presara malaiul in ploaie, niciodata dintr-o data.<\/strong> Asta e greseala numero unu care duce la cocoloase. Lasa malaiul sa cada in fir subtire peste apa care clocoteste si amesteca fara pauza &#8212; fiecare bobita are nevoie sa se hidrateze separat.<\/li>\n<li><strong>Foc mic si amestecat continuu.<\/strong> Mamaliga bolboroseste si se prinde repede de fund. Daca o lasi nesupravegheata, se afuma si gustul ars patrunde in toata oala. Lingura de lemn trebuie sa atinga fundul vasului la fiecare miscare.<\/li>\n<li><strong>Stii ca e gata cand se desprinde de pe peretii vasului.<\/strong> Asta e semnul de aur: cand mamaliga incepe sa se adune in mijloc si lasa marginile curate, e gata. Capata si un luciu mat, nu mai e lucioasa-umeda.<\/li>\n<li><strong>Ai rabdare.<\/strong> Sfatul meu simplu pentru o mamaliga reusita ramane &#8220;Sa ai rabdare!&#8221;. Pe masura ce se raceste se intareste si se taie frumos felii &#8212; exact asta o face perfecta pentru preparare in avans. O incalzesti la tigaie cu putin ulei (devine crocanta la exterior si moale inauntru) sau o pasezi cu putina apa fierbinte ca sa revina la consistenta cremoasa. Pentru portii mai mari, o poti si congela in felii, separate cu hartie de copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa profiti de mamaliga gatita, transform-o in alte feluri: incearca <a href=\"https:\/\/gourmandelle.com\/ro\/mamaliga-cu-ciuperci\/\">mamaliga cu ciuperci<\/a> pentru o masa completa sau o <a href=\"https:\/\/gourmandelle.com\/ro\/mamaliga-cremoasa-cu-lapte-de-cocos\/\">mamaliga cremoasa cu lapte de cocos<\/a> daca o preferi mai moale si mai bogata.
