Aroma, culoarea verde si textura te vor surprinde, iar sosul se face in cateva minute la robot, cat timp se desfac gnocchi in apa fierbinte. E atat de placut tot procesul, parca ar fi o joaca in bucatarie. \ud83d\ude42 Nu am inca o masina de paste, dar planuiesc sa imi cumpar una in viitorul apropiat. Pana atunci raman la retete care se fac si fara ea, cum sunt acesti gnocchi modelati cu mana. Cat despre sos, eu am inceput sa mananc foarte mult tofu, aproape zilnic. De obicei manac fie tofu simplu, fie tofu cu ardei sau marar, si rar tofu afumat, care este de departe preferatul meu. Aici afumatura lui da toata personalitatea sosului.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in sosul cremos de tofu afumat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lista este scurta, dar fiecare ingredient are un rol clar. Iata la ce sa fii atenta cand le alegi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Tofu afumat<\/strong> &#8212; inima sosului. El aduce aroma de afumat si, foarte important, sarea. De aceea nu mai adaugi sare separat. Cauta un tofu afumat ferm, nu prea apos.<\/li><li><strong>Mustar<\/strong> &#8212; da aciditate si ajuta sosul sa fie cremos si bine legat. Un mustar clasic, nu prea dulce, merge cel mai bine.<\/li><li><strong>Fulgi de drojdie inactiva<\/strong> &#8212; aduc o nota usor branzoasa, umami, care imbogateste sosul fara niciun produs lactat. Sunt si ingredientul care face textura mai catifelata.<\/li><li><strong>Piper alb macinat<\/strong> &#8212; pentru caldura discreta, fara sa innegreasca sosul verde-deschis.<\/li><li><strong>Apa<\/strong> &#8212; nu este un detaliu de umplutura. Apoi adaugi apa putin cate putin, pana cand sosul curge usor, dar ramane cremos. Asta e momentul in care e bine sa ai rabdare: daca torni toata apa odata, risti un sos prea lichid, iar inapoi nu mai poti da. Gusta inainte de a adauga orice altceva. Pentru ca tofu afumat este deja sarat, cel mai probabil nu vei avea nevoie de sare deloc. Sosul fiind crud, isi pastreaza culoarea proaspata si toate aromele intacte.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce merge sosul crud peste gnocchi calzi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tofu afumat se emulsioneaza bine la robot pentru ca proteina si grasimea lui, impreuna cu mustarul, leaga apa intr-o crema stabila, fara sa fie nevoie de fierbere sau de faina. Caldura vine de la gnocchi proaspat scosi din apa, care incalzesc sosul cat sa fie placut, fara sa il gateasca si fara sa il taie. Asa pastrezi aroma vie a tofu afumat si culoarea verde a felului, in loc sa le pierzi pe foc. Daca te-ai indragostit de pastele fara gluten facute in casa, mai ai de incercat si <a href=\"https:\/\/gourmandelle.com\/ro\/spaghete-cu-avocado-busuioc-fara-gluten\/\">spaghetele cu avocado si busuioc fara gluten<\/a> sau, pentru o cina la cuptor, o <a href=\"https:\/\/gourmandelle.com\/ro\/tarta-de-paste-la-cuptor-tofu-fara-gluten\/\">tarta de paste la cuptor cu tofu<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum pastrezi gnocchi si sosul<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul de tofu afumat se pastreaza foarte bine si chiar este practic sa il faci dinainte. Tine-l intr-un recipient inchis la frigider 2-3 zile si amesteca-l bine inainte de folosire, eventual cu putina apa daca s-a ingrosat la rece. Gnocchi proaspeti se gatesc cel mai bine in ziua in care ii faci, dar ii poti pregati cu cateva ore inainte si ii tii pe o tava infainata, acoperiti, pana ii fierbi. Daca vrei sa ii faci cu mult timp inainte, cei nefierti se congeleaza foarte bine asezati intai pe o tava, apoi mutati in punga.
