Tapioca ii da elasticitatea care se intinde, iar drojdia gustul de branza. Iese si sub forma de bilute, si ca sos topit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt atat de incantata sa va prezint reteta mea de branza mozzarella vegana! Arata ca branza reala, are gustul foarte similar cu ea si se mai si topeste. A trebuit sa testez reteta de vreo 4 ori inainte sa ii nimeresc textura si gustul dorit, asa ca pot sa va spun sincer ca rezultatul mi-a depasit complet asteptarile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu nu am folosit un blender performant, asa ca puteti vedea in poze ca nu s-a pulverizat complet caju, si tot a iesit excelent. Am facut din aceeasi compozitie doua lucruri: un sos de branza topita perfect pentru paste si niste mici bilute de mozzarella vegana pe care le-am pus la frigider pentru mai tarziu. Trebuie pus la inmuiat peste noapte, pentru ca asa se inmoaie complet si se mixeaza intr-un lapte fin si catifelat. Daca ai uitat sa il pui din timp, il poti acoperi cu apa clocotita si il lasi macar 15-20 de minute. Alege caju crud, nu prajit si nesarat, ca sa controlezi tu gustul final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> este ingredientul-cheie care face diferenta. Ea este responsabila pentru efectul de intindere si topire, acel fir elastic specific mozzarellei. Cauta exact &#8220;faina de tapioca&#8221; (numita uneori amidon de tapioca), nu o inlocui cu alt amidon, pentru ca tocmai ea da textura filanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> aduc gustul de branza. Sunt fulgi galbeni cu aroma savuroasa, usor de nuca, complet diferiti de drojdia de panificatie, asa ca nu le confunda. Daca iti place un gust mai pronuntat, poti adauga inca o lingura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sucul de lamaie<\/strong> da acea aciditate subtila care imita gustul branzei fermentate. Foloseste suc proaspat stors daca poti, are o prospetime pe care cel din comert nu o are.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea de mare<\/strong> potenteaza tot. La inceput compozitia este un lapte lichid, apoi se ingroasa brusc si incepe sa se desprinda de pe tigaie, devenind elastica si lucioasa. Acela e momentul in care stii ca e gata.<\/li>\n<li><strong>Foc mediu, nu mare.<\/strong> Daca dai focul prea tare, tapioca se prinde si se face cocoloase inainte sa se intinda uniform. Rabdarea la foc mediu este ce face textura sa fie neteda.<\/li>\n<li><strong>Pentru bilute, racire in apa cu gheata si sare.<\/strong> Umple un bol cu apa rece ca gheata, dizolva o lingura de sare grunjoasa in ea, apoi ia cu lingura din compozitia calda si pune fiecare biluta in apa. Sarea condimenteaza si exteriorul, iar apa rece le ajuta sa se inchege.<\/li>\n<li><strong>Lasa branza sa se odihneasca putin.<\/strong> Dupa ce opresti focul, daca o lasi sa se raceasca un pic, se inchega si mai bine si se modeleaza mai usor.<\/li>\n<li><strong>Daca nu ai blender performant, nu te ingrijora.<\/strong> Eu nu am folosit unul si se vedea ca nu s-a pulverizat complet caju, dar rezultatul a fost excelent. Eu chiar pe asta mizez: fac o portie mai mare, scot ce imi trebuie pentru sos cald pe loc si las restul ca bilute pentru mesele urmatoare. Daca le-ai tinut in apa cu sare, le poti scurge inainte de a le depozita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul topit se foloseste cel mai bine cald, proaspat facut, peste paste sau macaroane. Daca s-a racit, il poti reincalzi usor la foc mic, amestecand, ca sa redevina cremos. Daca s-a ingrosat prea tare, adauga putina apa fierbinte si amesteca pana revine la consistenta dorita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac branzeturile vegane, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/sandvisuri-cu-branza-vegana-topita-fara-gluten\/\">sandvisurile cu branza vegana topita fara gluten<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/paste-cu-branza-vegana-la-cuptor\/\">pastele cu branza vegana la cuptor<\/a>.
