Rezultatul e o mamaliga matasoasa, cu o aroma subtila si cremoasa, pe care o servesti calda alaturi de un sote rapid de tofu afumat cu ardei. E simpla, satioasa si se face din ingrediente pe care le ai mai mereu in casa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Eu m-am indragostit de ea!<\/em> Din totdeauna am fost mare fan al mamaligii &#8212; e o mancare pe cat de simpla, pe atat de gustoasa si de versatila. Un malai mai fin se fierbe mai repede si da o textura mai catifelata; cel mai grosier cere putin mai mult timp pe foc si amestecat constant.<\/li><li><strong>Lapte de cocos<\/strong> &#8212; partea care transforma reteta. Adaugat catre final, da cremozitate si o aroma subtila de cocos, fara sa acopere gustul de mamaliga.<\/li><li><strong>Fulgi de drojdie inactiva<\/strong> &#8212; aduc o nota usor &#8220;branzoasa&#8221;, umami, care inlocuieste cascavalul sau branza din mamaliga clasica si mentine reteta vegana.<\/li><li><strong>Tofu afumat<\/strong> &#8212; pentru sote. Fiind deja afumat, are gust pronuntat si se rumeneste frumos la tigaie.<\/li><li><strong>Ardei gras, ceapa, patrunjel proaspat<\/strong> &#8212; legumele soteului, pentru culoare, dulceata si prospetime.<\/li><li><strong>Boia afumata, piper, ulei de masline, sare<\/strong> &#8212; condimentele care leaga totul; boia afumata se potriveste perfect cu tofu afumat.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o faci sa iasa cremoasa, fara cocoloase<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul unei mamaligi reusite sta in doua momente. Primul: presari malaiul incet, in ploaie, in apa care abia clocoteste, amestecand fara oprire. Asa boabele se hidrateaza uniform si nu se lipesc intre ele in cocoloase. Al doilea: adaugi laptele de cocos si fulgii de drojdie dupa ce malaiul a inceput sa se ingroase, apoi mai lasi mamaliga pe foc inca vreo 10 minute, amestecand din cand in cand. Fierberea aceasta finala da timp amidonului din malai sa se gateasca complet &#8212; de aici vine cremozitatea si dispare gustul de faina cruda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru sote, soteaza intai ceapa cateva minute, apoi adauga tofu si ardeiul. Lasa tofu sa stea suficient pe tigaie cat sa prinda putina culoare inainte sa amesteci &#8212; asa capata o crusta usoara, in loc sa se faramiteze. Patrunjelul proaspat il pui la final, cu focul oprit, ca sa-si pastreze aroma si culoarea vie. Daca vrei sa schimbi garnitura, mamaliga cremoasa merge minunat si alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/mamaliga-cu-ciuperci\/\">mamaliga cu ciuperci<\/a> ca inspiratie pentru un sote de ciuperci, sau langa o <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-mazare-cremoasa-cu-fulgi-de-ceapa-prajita\/\">mancare de mazare cremoasa<\/a> daca vrei ceva mai consistent. Pentru si mai multe idei, vezi colectia de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-mamaliga\/\">retete cu mamaliga<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o pastrezi si o reincalzesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mamaliga cremoasa se pastreaza la frigider, intr-un recipient inchis, 2-3 zile. Pe masura ce se raceste se intareste &#8212; e normal, asa se comporta amidonul din malai. Cand o reincalzesti, pune-o intr-o craticioara la foc mic cu putina apa sau lapte de cocos in plus si amesteca pana redevine cremoasa. Soteul de tofu se pastreaza separat tot la frigider si se reincalzeste rapid in tigaie.
