Tarhonul ii da o aroma usor anason-citrica, distincta, care transforma o fasole banala intr-un fel de mancare aromat, satios si complet vegan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta asta este clar una dintre preferatele mele si am invatat-o de la mama mea. Pe cat pare de banala, pe atat e de aromata si are ceva cu totul special. Sau poate sunt eu innebunita dupa tarhon si mi se pare Dumnezeiesc gustul lui alaturi de fasole!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il adaug mereu la retetele mele de fasole si uneori chiar si in cele de cartofi. Tarhonul are o nota anason-citrica subtila, putin dulceaga, care taie din greutatea fasolei si o face sa para mult mai rafinata decat este de fapt.<\/li>\n\n\n\n<li><strong>Ingrediente putine si ieftine.<\/strong> Fasole, ceapa, usturoi, boia, dafin, tarhon, ulei &#8212; atat. Niciun ingredient pretentios, doar tehnica buna.<\/li>\n\n\n\n<li><strong>Complet de post si vegana<\/strong>, fara compromisuri la gust. Eu folosesc fasole cu bob mare, de tip butter beans sau fasole lima, pentru ca ramane cremoasa in interior si se tine bine, fara sa se desfaca. Cand cumperi fasole uscata, uita-te sa fie cu bobul intreg, neted si fara zbarcituri puternice; fasolea foarte veche fierbe greu si ramane tare oricat ai astepta-o. Cele 500 g date in reteta cresc mult la fiert, asa ca o sa iasa o portie generoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarhon proaspat sau in otet<\/strong> &#8212; vedeta acestui fel de mancare. Eu pun 4 linguri, ca sa se simta cu adevarat. Daca folosesti tarhon proaspat, adauga-l spre final ca sa nu-si piarda aroma; daca folosesti tarhon in otet, scurge-l usor inainte, ca sa nu acrese prea tare mancarea. Tarhonul uscat e o varianta de rezerva, dar nu are nici pe departe acelasi parfum viu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoiul<\/strong> &#8212; baza de aroma. Doua cepe tocate si patru catei de usturoi pisati formeaza fundatia tocanei. Ceapa se caleste pana devine sticloasa si dulce; nu o lasa sa se arda, pentru ca un gust ars se simte in toata mancarea pana la final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia dulce<\/strong> &#8212; da culoarea aceea calda, rosiatica, si o aroma usor afumata. Cele 2 linguri par mult, dar fasolea absoarbe bine culoarea si gustul. Alege o boia rosie, parfumata, nu una palida si veche, care si-a pierdut din putere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Frunzele de dafin<\/strong> &#8212; cele 3 frunze parfumeaza discret apa de fiert si dau profunzime tocanei. Scoate-le inainte de servire; rolul lor e doar sa lase aroma, nu sa fie mancate.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa fasolea la inmuiat peste noapte.<\/strong> E pasul care conteaza cel mai mult. Fasolea inmuiata fierbe in vreo ora, fata de circa 2 ore daca o pui uscata direct la fiert. In plus, inmuierea ajuta digestia si reduce balonarea.<\/li>\n\n\n\n<li><strong>Schimba apa de cel putin doua ori in timpul fierberii.<\/strong> Asa scapi de compusii care dau balonare si fasolea iese mai usor de digerat. E un mic efort care face o diferenta mare la stomac.<\/li>\n\n\n\n<li><strong>Adauga sarea spre final, nu de la inceput.<\/strong> Sarea pusa prea devreme intareste coaja fasolei si o face sa fiarba mai greu. Gateste-o in apa nesarata si potriveste de sare abia dupa ce bobul e moale.<\/li>\n\n\n\n<li><strong>Pune apa doar cat sa acopere fasolea.<\/strong> Daca torni prea multa, tocana ramane apoasa. Vrei o zeama putin legata, care imbraca fasolea, nu o supa.<\/li>\n\n\n\n<li><strong>Stii ca e gata cand<\/strong> bobul se striveste usor intre degete sau cu o furculita, iar zeama s-a ingrosat putin. Va fi putin mai putin cremoasa, dar gustul ramane la fel de bun.<\/li>\n\n\n\n<li><strong>Tarhon in otet vs. proaspat.<\/strong> Reteta merge cu oricare dintre ele. Vara folosesc tarhon proaspat din gradina, iar iarna apelez la cel pus in otet &#8212; ajusteaza cantitatea dupa cat de intens e.<\/li>\n\n\n\n<li><strong>Mai picant.<\/strong> Daca iti place sa fie iute, adauga putin ardei iute sau un varf de boia iute langa cea dulce. Tarhonul se intelege surprinzator de bine cu o nota picanta.<\/li>\n\n\n\n<li><strong>Cu cartofi.<\/strong> Asa cum spuneam, tarhonul merge minunat si cu cartofii, asa ca poti adauga cativa cartofi taiati cuburi in timpul fierberii, pentru o tocana si mai consistenta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mancarea de fasole cu tarhon se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile, si chiar are gust mai bun a doua zi, dupa ce aromele s-au asezat. La reincalzire poate sa se ingroase, asa ca adauga putina apa fierbinte pana revine la consistenta dorita. Se congeleaza fara probleme pana la 3 luni &#8212; portioneaz-o si o ai gata pentru zilele aglomerate. Tocmai pentru ca rezista atat de bine, o gatesc des in cantitate mai mare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac mancarurile cu fasole, mai poti incerca o <a href=\"https:\/\/gourmandelle.com\/ro\/iahnie-de-fasole-cu-tofu-afumat\/\">iahnie de fasole cu tofu afumat<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-fasole\/\">ciorba de fasole<\/a> pe vreme rece. Iar daca te-a cucerit combinatia cu tarhon, arunca o privire si la <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-cartofi-si-morcovi-cu-tarhon\/\">mancarea de cartofi si morcovi cu
