Se face intr-o singura oala, in aproximativ 50 de minute, si iese reconfortant, consistent si plin de arome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt sigura ca ati auzit de gulas pana acum &#8212; si daca sunteti din Romania, cu siguranta l-ati gustat de atatea ori! Gulasul este un preparat traditional unguresc, ceva intre o supa si o <a href=\"https:\/\/gourmandelle.com\/ro\/tocana-africana-cu-arahide\/\">tocana<\/a>, reconfortant si parfumat, care incalzeste sufletul in zilele reci. Reteta clasica se face cu vita, legume si multa paprika. Eu am transformat-o intr-o varianta de post, la fel de gustoasa si mult mai accesibila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am incercat prima oara gulasul de post intr-o perioada cand cautam retete consistente si ieftine pentru zilele de post. M-a surprins cat de mult seamana cu varianta clasica &#8212; textura texturatului de soia dupa ce se fiarbe si apoi se caleste cu ceapa si paprika afumata este absolut delicioasa. Cuburile uscate se fierb 10-15 minute inainte de a fi folosite, apoi se scurg bine. Dupa calire cu condimente, capata o textura ferma si absorb aromele minunat. Foloseste cuburi medii sau mari, nu granule.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; Doua cepe medii feliate formeaza baza aromatica a gulasului. Se calesc in ulei de masline pana devin moi si translucide &#8212; nu sari acest pas, caramelizarea usoara a cepei aduce dulceata naturala si echilibreaza paprika.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; Doi catei de usturoi maruntiti se adauga odata cu ceapa si adancesc aromele de baza. Nu il arde &#8212; devine amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Paprika afumata<\/strong> &#8212; Doua linguri de paprika afumata sunt condimentul definitoriu al oricarui gulas. Variantele afumate au o complexitate aparte fata de paprika dulce obisnuita. Daca nu gasesti paprika afumata, foloseste paprika dulce, dar rezultatul va fi mai putin profund ca aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piure de rosii<\/strong> &#8212; Cele 5 linguri de piure de rosii (pasta de tomate concentrata) adauga corp, culoare si aciditate echilibrata. Se caleste 2-3 minute inainte de a adauga lichidul, pentru a-si pierde gustul crud.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seminte de chimen<\/strong> &#8212; Un ingredient clasic in bucataria ungureasca, chimenul adauga o nota usor pamantie si calduroasa. O lingurita este suficienta &#8212; dozat corect, completeaza paprika fara sa domine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Supa de legume<\/strong> &#8212; Un litru de supa de legume (sau apa simpla) formeaza baza lichida. Adauga-le dupa ce dai focul la mediu si amesteca imediat.<\/li>\n<li>Lasa supa sa fiarba la foc mic 30-40 de minute fara sa te grabesti &#8212; in acest timp texturatul absoarbe aromele si supa se leaga usor.<\/li>\n<li>Gusta la final si ajusteaza sarea &#8212; piureul de rosii si supa de legume au deja sare, asa ca nu exagera de la inceput.<\/li>\n<li>Pentru un gulas mai gros, da capacul jos in ultimele 10 minute si lasa lichidul sa se reduca putin.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>In loc de texturat de soia<\/strong> poti folosi fasole rosie sau naut fiert &#8212; reteta devine si mai rapida si la fel de satioasa. Inspiratie gasesti si la <a href=\"https:\/\/gourmandelle.com\/ro\/supa-cu-fasole-rosie\/\">supa cu fasole rosie<\/a>.<\/li>\n<li><strong>Paprika afumata<\/strong> poate fi inlocuita cu paprika dulce + un varf de boia de ardei iute, daca preferi o nota mai picanta in loc de cea afumata.<\/li>\n<li><strong>Supa de legume<\/strong> poate fi inlocuita cu apa simpla + o lingurita de miso sau sos de soia pentru a adauga umami suplimentar.<\/li>\n<li><strong>Varianta mai consistenta<\/strong> &#8212; adauga 1-2 cartofi taiati cubulete odata cu lichidul; vor fierbe in aceleasi 30-40 de minute si fac gulasul si mai satios.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Gulasul de post se pastreaza excelent la frigider intr-un recipient inchis pana la 4 zile. A doua zi este si mai bun &#8212; condimentele au timp sa se intensifice. La reincalzire, adauga un strop de apa sau supa de legume daca s-a ingrosat prea mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti fierbe si scurge texturatul de soia cu o zi inainte si il pastrezi la frigider. Calirea si fierberea le faci in ziua in care servesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gulasul se poate si congela &#8212; portionat in pungi sau recipiente, se pastreaza pana la 2 luni.
