Textura este pufoasa si umeda, cu un parfum intens de scortisoara care umple toata bucataria la copt. Mai simpla decat rulourile cu scortisoara (nu necesita dospire sau impletire), dar la fel de satisfacatoare ca gust. Mixurile cu xantan deja inclus dau textura mai stabila. Daca nu ai nevoie de varianta fara gluten, poti folosi faina alba obisnuita tip 550 in aceeasi cantitate.<\/p><p><strong>Scortisoara<\/strong> &#8211; foloseste scortisoara Ceylon (mai fina, mai dulce si mai complexa) sau Cassia (mai intensa si mai picanta) in functie de preferinta. Scortisoara macinata proaspata are o aroma mult mai vie decat cea veche. Verifica data de expirare &#8211; scortisoara isi pierde parfumul dupa 6-12 luni de la deschidere.<\/p><p><strong>Laptele vegetal<\/strong> &#8211; orice lapte vegetal functioneaza: migdale, ovaz, soia, cocos. Laptele de ovaz sau soia dau o textura mai densa si mai umeda; laptele de migdale este mai usor. Temperatura camerei este ideala pentru incorporare uniforma.<\/p><p><strong>Uleiul<\/strong> &#8211; ulei de cocos topit (pentru o nota subtila de nuca de cocos care merge excelent cu scortisoara) sau ulei de floarea-soarelui neutru. Uleiul de masline functioneaza dar lasa un gust usor pronuntat. Uleiul de cocos solidifica prajitura la racire &#8211; la temperatura camerei textura e optima.<\/p><p><strong>Agentul de crestere<\/strong> &#8211; praf de copt (nu drojdie). Datorita prafului de copt, prajitura creste uniform in cuptor fara dospire prealabila. Prajitura fara gluten are tendinta sa se lipeasca mai mult decat cea cu faina obisnuita &#8211; un strat generos de ulei si optional o pudra de faina pe pereti asigura demularea curata.<\/li>\n\n<li>Nu amesteca compozitia excesiv dupa incorporarea fainii. Amesteca doar pana se omogenizeaza, 10-15 secunde. Amestecatul prelungit activeaza glutenul (sau echivalentul sau in faina fara gluten) si da o textura mai densa si mai cauciucata.<\/li>\n\n<li>Prajiturile individuale in ramekin sunt gata cand un scobitor introdus in centru iese cu cateva firimituri umede (nu cu aluat crud). Daca iese complet curat, prajitura e usor uscata. Textura ideala este pufoasa si umeda, nu uscata.<\/li>\n\n<li>Lasa sa se raceasca 5-10 minute in ramekin inainte de servire sau demulare. Imediat din cuptor prajitura e prea moale pentru a fi rasturata; dupa racire partiala se fermeaza si se demuleaza usor trecand un cutit pe margini.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Cu stafide sau afine uscate<\/strong> &#8211; adauga 50g stafide sau afine uscate (inmuiate 10 minute in apa calda si scurse) in compozitie inainte de copt. Fructele uscate adauga dulceata naturala si mici buzunare de aroma in fiecare muscatura.<\/p><p><strong>Cu nucit sau nuca pecan<\/strong> &#8211; adauga 40g nuci tocate grosier sau nuca pecan pentru textura si gust de nuca ce se potriveste cu scortisoara. Poti presara si deasupra inainte de cuptor pentru un finisaj crocant.<\/p><p><strong>Cu glazura de zahar pudra<\/strong> &#8211; dupa racire, prepara o glazura simpla din 4 linguri zahar pudra si 1-2 lingurite lapte vegetal (consistenta groasa). Toarna deasupra prajiturii racite. Transforma aspectul intr-un desert mai festiv si mai dulce.<\/p><p><strong>Varianta intr-o forma de chec<\/strong> &#8211; compozitia se poate coace si intr-o forma de chec standard (20x10cm) la 175\u00b0C, 35-40 de minute. La frigider se pastreaza pana la 5 zile, dar isi pierde putin din moliciune (incalzeste 30 secunde la microunde sau 5 minute la 150\u00b0C in cuptor inainte de servire). Se congeleaza bine: rasturna prajiturile din ramekinuri, lasa sa se raceasca complet, inveleste individual in folie si congeleaza pana la 2 luni. Dezgheta la temperatura camerei sau la microunde.<\/p><p>Pentru pregatire in avans, amesteca ingredientele uscate separat de cele umede cu o seara inainte. Combina totul si toarna in ramekinuri imediat inainte de copt &#8211; compozitia nu se tine bine dupa ce praful de copt a intrat in contact cu lichidul. Prajiturile pot fi coapte cu 1-2 zile inainte si reincalzite la servire.<\/p><p>Merge excelent la <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-clatite-cu-banane\/\">micul dejun<\/a> alaturi de
