Diferenta se simte: textura iese mai catifelata, gustul mai curat, iar tu controlezi cat de fin il vrei. Aceasta este reteta mea de baza de humus, cu un topping de seminte rumenite si un strop generos de ulei de masline.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt innebunita dupa humus. Serios! Este de departe mancarea mea preferata si de obicei il mananc in cantitati industriale. Spre deosebire de celelalte retete de humus de pe blog, pe aceasta am facut-o de la 0 &#8212; adica nu am mai folosit naut la conserva, asa cum fac de obicei din lene. Nautul uscat (250 g) este baza &#8212; inmuiat peste noapte si fiert, da o crema mult mai fina decat varianta la conserva. Tahini (4 linguri), adica pasta de susan, aduce cremozitatea si gustul caracteristic; sucul de la o jumatate de lamaie il echilibreaza cu aciditate. Usturoiul crud (3 catei) si o jumatate de lingurita de chimion macinat dau profunzime, iar uleiul de masline (3 linguri in compozitie, plus pentru servit) leaga totul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bicarbonatul de sodiu (o jumatate de lingurita in apa de fierbere) nu este optional aici &#8212; ajuta cojile nautului sa se desprinda mai usor si inmoaie boabele, ceea ce conteaza enorm pentru un humus extra-fin. Pentru topping folosesc 3 linguri de mix de seminte: pin, in, susan, floarea soarelui, dovleac si chia.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul unui humus extra-fin<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Doua lucruri fac diferenta intre un humus granulos si unul matasos. Primul: scoaterea pielitelor. Dupa ce ai fiert nautul cca o ora, scurge-l si umple cratita cu apa rece, apoi &#8220;maseaza&#8221; boabele cu mainile ca sa se desprinda cojile. Scurge apa (pielitele plutesc la suprafata), reumple si repeta de 5-6 ori, pana cand aproape toate cojile au plecat. Pielitele sunt fix ce face humusul sa iasa fibros, asa ca pasul asta merita rabdarea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Al doilea secret tine de ordinea in robot, si aici vorbesc din experienta: am facut greseala asta si am regretat. Proceseaza intai nautul singur, pana devine super-fin, si abia apoi adauga restul ingredientelor. Daca arunci totul deodata, pasta nu mai apuca sa se sparga complet si ramane cu textura. Le presari peste humus, stropesti din belsug cu ulei de masline extravirgin presat la rece si gata. Stropit asa, acest humus chiar mi-a gadilat papilele gustative. Semintele rumenite adauga un crocant care contrasteaza placut cu crema fina de dedesubt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai prins gustul humusului facut in casa, ai de unde alege pe blog. Incearca un <a href=\"https:\/\/gourmandelle.com\/ro\/humus-simplu\/\">humus simplu<\/a> de fiecare zi, un <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-ardei-gras-copt\/\">humus cu ardei gras copt<\/a> pentru o nota dulce-afumata, sau un <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-avocado\/\">humus cu avocado<\/a> cremos. Pentru un meniu mai consistent, l-as pune alaturi de un <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-un-buddha-bowl\/\">buddha bowl<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum il pastrezi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Humusul se pastreaza la frigider, intr-un recipient inchis ermetic, 4-5 zile. Iti recomand sa pui ulei de masline si semintele la topping abia in momentul servirii &#8212; daca le incorporezi din timp, semintele isi pierd din crocant. Daca s-a ingrosat in frigider, mai adauga o lingura de apa rece sau putin suc de lamaie si amesteca pana revine la consistenta cremoasa.
