In varianta mea adaug si vanata taiata cubulete, care se topeste in oala si aduce un plus de catifelare. Se face intr-o singura cratita, in cca 25 de minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu pot spune ca imi place prea mult mancarea indiana, insa trebuie sa recunosc ca din cand in cand imi place sa mai experimentez si sa mananc o mancare indiana foarte condimentata. Asa am ajuns la acest dhal: am pornit de la o reteta clasica de linte rosie si am adaptat-o conform gusturilor mele. Am adaugat vinete si a iesit, zic eu, chiar mai buna decat originalul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce m-a cucerit definitiv a fost gustul usor iute, care mi-a placut la nebunie. Spre deosebire de cea verde sau maro, lintea rosie este decorticata, asa ca se fierbe repede si se desface singura intr-un piure cremos &#8212; exact ce vrei la un dhal. Cauta boabe de culoare portocaliu-aprins, uniforme, fara firimituri sau praf in punga. Nu are nevoie de inmuiere, dar merita clatita bine sub jet de apa rece pana cand apa iese limpede, ca sa elimini amidonul si eventualele impuritati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vanata<\/strong> este ingredientul pe care l-am adaugat eu peste reteta clasica. Alege o vanata ferma, grea pentru marimea ei, cu coaja lucioasa si fara pete moi &#8212; asta inseamna ca este proaspata si nu va fi amaruie. O tai cubulete si o adaugi direct in oala; pe masura ce fierbe in lichidul condimentat, se inmoaie si practic se topeste in mancare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Turmericul pudra<\/strong> da culoarea aurie caracteristica si o nota usor pamantoasa. Doua lingurite pot parea mult, dar se echilibreaza perfect cu restul mirodeniilor. Un turmeric proaspat are o aroma vie si o culoare intensa; daca al tau e palid si fara miros, probabil sta de prea mult timp in dulap si e momentul sa il inlocuiesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul pudra si usturoiul<\/strong> formeaza baza aromata a oricarui dhal. Ghimbirul aduce o caldura picanta, usor lemnoasa, iar usturoiul pisat o profunzime savuroasa. Daca ai ghimbir proaspat, il poti razui in locul celui pudra pentru o aroma si mai vie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chili sau boiaua iute<\/strong> regleaza nivelul de iuteala. Eu am vrut un gust usor iute, asa ca o lingurita a fost perfecta; daca preferi mai bland, pune mai putin sau alege o boia dulce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde si ceapa obisnuita<\/strong> aduc dulceata si corp mancarii. Ceapa marunt taita o calesc la inceput, iar ceapa verde o pastrez pentru prospetime si o presar spre final, alaturi de patrunjelul proaspat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste ceapa la foc mediu, nu mare.<\/strong> Vrei sa devina sticloasa si aromata, nu arsa. Amesteca continuu 1-2 minute &#8212; ceapa arsa face mancarea amaruie.<\/li>\n<li><strong>Pune sarea abia la final.<\/strong> Daca sarezi lintea de la inceput, boabele se intaresc si fierb mult mai greu. Adaug-o doar dupa ce lintea s-a inmuiat.<\/li>\n<li><strong>Stii ca e gata cand lintea se desface singura.<\/strong> Dupa 20-25 de minute la foc mic, boabele isi pierd forma si mancarea capata o consistenta cremoasa. Daca se ingroasa prea tare, mai adaugi cateva linguri de apa fierbinte.<\/li>\n<li><strong>Prajeste mirodeniile cateva secunde inainte de a adauga apa.<\/strong> Cand mirodeniile ating uleiul cald, isi elibereaza uleiurile aromatice si gustul devine mult mai intens. Poti adauga in schimb un dovlecel taiat cubulete, care se gateste tot rapid si aduce o textura asemanatoare.<\/li>\n<li><strong>Mai cremos:<\/strong> spre final poti turna cateva linguri de lapte de cocos pentru un dhal mai bogat si mai catifelat, in stilul indian clasic.<\/li>\n<li><strong>Mai aromat:<\/strong> adauga o lingurita de chimion pudra sau cateva seminte de chimion prajite in ulei la inceput, pentru un strat suplimentar de aroma.<\/li>\n<li><strong>Cu rosii:<\/strong> o rosie taiata cubulete sau o lingura de pasta de tomate adaugata odata cu mirodeniile transforma dhal-ul intr-o versiune usor acrisoara si mai intensa la culoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dhal-ul se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile. De fapt, devine si mai bun a doua zi, dupa ce mirodeniile au avut timp sa se imbine. La reincalzire se ingroasa, asa ca adaugi putina apa sau supa de legume si amesteci pe foc mic pana se incalzeste uniform. Se congeleaza fara probleme pana la 3 luni &#8212; il portionezi in caserole si il dezgheti la frigider peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu il servesc cu patrunjel proaspat tocat deasupra si, cand am chef de o masa indiana completa, alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/linte-cu-orez\/\">linte cu orez<\/a>. Daca vrei sa il transformi intr-un pranz si mai consistent, merge minunat cu o paine plata calda: incercati reteta mea de parathas vegane, o sa va placa.
