Reteta de mai jos iti arata cum sa construiesti fiecare strat de la zero, de la chiflele fara gluten coapte in casa pana la chiftelutele de naut prajite in tigaie. Dupa parerea mea, un burger vegetal bun trebuie sa arate la fel ca cel cu carne, sa aiba o textura similara si neaparat acelasi gust satisfacator ca originalul. Cu nautul ca baza si condimentele potrivite, chiftelutele acestea chiar reusesc asta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are doua componente, asa ca merita sa intelegi rolul fiecarui ingredient. Pentru chifle folosesc faina fara gluten MixIt Universal de la Schar, drojdie instant, lapte de soia cald, ulei de cocos topit si tarate de psyllium. Psyllium-ul este ingredientul fara de care un aluat fara gluten ramane firimicios: absoarbe apa si formeaza un gel care tine chifla legata si elastica, exact rolul pe care l-ar avea glutenul intr-o paine obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru chiftelute, baza este nautul uscat pus la inmuiat peste noapte si apoi fiert. Carobul pudra si boiaua afumata dau culoarea inchisa si gustul de &#8220;rumenit&#8221; specific carnii, iar amestecul de cimbru, oregano, usturoi pudra si 7 piperuri construieste profilul savuros. Incepe prin a combina lichidele calde cu zaharul si drojdia: caldura activeaza drojdia, iar zaharul ii da hrana ca sa porneasca fermentatia. Apoi amesteci faina, sarea, psyllium-ul si uleiul de cocos si adaugi lichidele. Nu te speria ca aluatul iese apos si lipicios, asa trebuie sa fie &#8212; psyllium-ul se va lega in timp ce aluatul creste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lasa bolul acoperit cu folie intr-o zona calda pana creste, apoi imparte aluatul in aproximativ 10 bile, cu mainile bine unse cu ulei (altfel aluatul lipicios devine imposibil de modelat). Deoarece faina fara gluten de la Schar este foarte alba si painile imi ies de obicei albe ca hartia, am inlocuit clasicul amestec de lapte cu galbenus de ou cu un amestec de ulei de masline si turmeric pudra, cu care ung fiecare chifla. Da o culoare aurie frumoasa, complet vegetala. Presar un praf de boia afumata si cateva seminte de chimen negru, apoi coc chiflele la 180C cam 20 de minute, pana se rumenesc.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul chiftelutelor de naut cu textura buna<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fierbe nautul inmuiat peste noapte impreuna cu putin bicarbonat de sodiu &#8212; bicarbonatul inmoaie coaja nautului si il fierbe mai repede, ajungand la o textura cremoasa in 40-50 de minute. Scurge-l bine si pune-l in robot impreuna cu restul ingredientelor pentru chiftelute, apoi proceseaza 1-2 minute. Lasa compozitia la frigider vreo 30 de minute: racirea leaga amestecul si il face mai usor de modelat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un sfat de organizare: poti pregati compozitia de chiftelute chiar dupa ce ai bagat chiflele la cuptor, ca sa fie ambele gata la timp. Cand vine momentul, va recomand sa prajiti chiftelutele in tigaie, nu sa le bagati la cuptor. Eu consider ca ele trebuie sa fie un pic uleioase pentru a avea textura potrivita de chiftea de burger &#8212; prajirea in putin ulei le da o crusta exterioara si pastreaza miezul fraged. Eu am folosit o combinatie de ketchup (Heinz, preferatul meu) si aioli vegan. Intinde sosurile pe chifla, adauga feliile de ceapa si de rosie, asaza chifteluta fierbinte deasupra si finalizeaza cu verdeturi proaspete. Ador valeriana, asa ca pun o mana buna, plus muraturi pentru aciditate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La capitolul muraturi ai libertate: poti adauga felii de castraveciori murati, gogosar, sau preferatul meu, ardei kapia copt si pus in otet si ulei. Contrastul intre chifteluta calda, sosul cremos si muratura acra este exact ce face fiecare imbucatura interesanta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce servesti burgerul vegan<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un burger consistent cere o garnitura simpla si proaspata alaturi. Daca ai chef de inca o reteta in spiritul &#8220;fast-food de casa&#8221;, iti recomand sa incerci si alte variante de chiftelute vegetale, cum sunt acest <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetal-cu-fasole-adzuki\/\">burger vegetal cu fasole adzuki<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetarian-cu-linte-cartof-dulce\/\">burgerul vegetarian cu linte si cartof dulce<\/a>, ca sa ai mereu o baza diferita de proteine la indemana. Daca vrei sa ramai pe filonul fara gluten, <a href=\"https:\/\/gourmandelle.com\/ro\/lipii-fara-gluten-cu-susan-la-tigaie-parathas-vegane\/\">lipiile fara gluten cu susan la tigaie<\/a> sunt o alternativa buna la chifle cand nu ai timp sa coci.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si cum pregatesti din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cele doua componente se pastreaza cel mai bine separat. Chiftelutele de naut rezista 3-4 zile la frigider intr-un recipient inchis si se reincalzesc cel mai bine intr-o tigaie, ca sa isi recapete crusta. Chiflele fara gluten sunt cele mai bune in ziua in care le-ai copt; daca le pastrezi, tine-le intr-o punga si reincalzeste-le scurt inainte de a le folosi. Compozitia cruda de chiftelute poate sta la frigider cateva ore inainte de prajire, ceea ce o face perfecta pentru a o pregati din timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac mesele pe baza de naut si leguminoase, mai gasesti idei in <a href=\"https:\/\/gourmandelle.com\/ro\/pate-cremos-de-linte-rosie\/\">patele cremos de linte rosie<\/a> sau intr-un <a
