Au o aroma puternica si o textura carnoasa care convinge pana si omnivorii, iar de la cratita la masa nu iti ia mai mult de o jumatate de ora de lucru efectiv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A fost prima oara cand am mancat fajitas, va vine sa credeti? Pentru cei care nu stiu ce-s alea fajitas (asa cum nici eu nu stiam pana de curand..), sa stiti ca acestea sunt specifice bucatariei Tex-Mex si sunt de obicei facute din carne la gratar, taiata in bucatele subtiri si lungi si servite pe tortilla sau lipii de taco. Iata la ce sa fii atenta cand le alegi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Texturat de soia (tip noodles)<\/strong> &#8212; inima retetei, partea care da textura carnoasa. Cele mai lungi, sub forma de fasii, imita cel mai bine bucatile de carne taiate fajita.<\/li><li><strong>Tortillas fara gluten<\/strong> &#8212; eu am folosit tortillas fara gluten de la Schar. Sunt mai fragile decat cele clasice, asa ca manevreaza-le cu grija ca sa nu se rupa la rulat.<\/li><li><strong>Ardei gras si varza tocata<\/strong> &#8212; merg la tigaia grill ca sa capete acel gust usor afumat, specific fajitas.<\/li><li><strong>Ceapa julienne, rucola si castraveciori murati<\/strong> &#8212; partea cruda, pentru prospetime si o nota acrisoara care echilibreaza sosurile.<\/li><li><strong>Salsa de rosii si guacamole<\/strong> &#8212; sosurile care leaga totul; le intinzi direct pe foaia de tortilla.<\/li><li><strong>Cimbru, sare si ulei de masline<\/strong> &#8212; condimenteaza texturatul de soia si il fac aromat la copt.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum prepari pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are doua etape care merg in paralel: pregatesti texturatul de soia la cuptor si, intre timp, faci legumele la gratar. Pune mai intai apa cu sare la fiert, adauga texturatul de soia si fierbe-l 5 minute, doar cat sa se hidrateze. Stoarce-l bine de apa, intinde-l intr-o tava unsa cu ulei, presara cimbru si lasa-l la cuptor la 180C aproximativ 30 de minute, pana se rumeneste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cat sta soia la copt, incinge o tigaie grill unsa cu putin ulei, adauga ardeii si varza si tine-le la foc mare circa 10 minute. Acopera tigaia cu un capac ca legumele sa se inmoaie mai repede. La final, intinde salsa si guacamole pe foile de tortilla, adauga texturatul, legumele la gratar si restul ingredientelor crude, impartind cantitatile la jumatate pentru fiecare fajita. Asta e tot.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce iese textura carnoasa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul texturii sta in doi pasi: fierbi texturatul de soia doar atat cat sa se hidrateze, apoi il storci foarte bine inainte de copt. Daca ramane prea multa apa in el, nu se va rumeni si va iesi moale. La cuptor, cele 30 de minute la 180C scot umiditatea ramasa si dau acea margine usor crocanta care imita bucata de carne. Daca ramai fara tortillas cumparate, poti incerca si niste <a href=\"https:\/\/gourmandelle.com\/ro\/lipii-fara-gluten-cu-susan-la-tigaie-parathas-vegane\/\">lipii fara gluten facute in casa<\/a> ca baza pentru rulou.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi si pastrare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cea mai buna varianta este sa pregatesti componentele din timp si sa asamblezi fajitas chiar inainte de masa, ca tortilla sa nu se inmoaie. Texturatul de soia copt si legumele la gratar se pastreaza bine 2-3 zile la frigider, in recipiente inchise, si le reincalzesti rapid intr-o tigaie. Salsa, guacamole, rucola si castravecioarii ii tii separat si ii adaugi la final, reci.
