Se face dintr-o singura conserva sau portie de fasole pusa la inmuiat din timp, iar rezultatul este un burger satios, plin de proteine vegetale si fara carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai pofta de fast-food, iti recomand aceasta varianta mai sanatoasa, dar la fel de gustoasa. In sfarsit mai postez si eu o reteta, iar asta mi se pare perfecta pentru a incepe in forta: aveam pofta de ceva nesanatos si am decis sa prepar in loc o alternativa care sa ma sature fara sa ma simt vinovata. Inmuierea din timp scurteaza fierberea si ajuta boabele sa se zdrobeasca uniform, iar bicarbonatul de sodiu adaugat in apa de fiert inmoaie coaja si grabeste gatitul. Daca te grabesti, poti folosi si fasole neagra din conserva, bine scursa si clatita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Liantul aici nu este oul, ci <strong>taratele de psyllium<\/strong> impreuna cu faina. Psyllium absoarbe umiditatea si formeaza un gel care tine chiftelutele legate, exact rolul pe care l-ar avea oul intr-un burger clasic &#8212; de aceea reteta ramane complet vegana. Condimentele dau caracterul: boiaua afumata aduce nota aceea de gratar, iar cimbrul, oregano si usturoiul pudra rotunjesc gustul. Patrunjelul proaspat si ceapa maruntita adauga prospetime si textura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce se leaga chiftelutele fara ou<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul unui burger vegetal care nu se sfarama sta in echilibrul dintre umiditate si lianti. Fasolea fiarta si pasata aduce amidonul care leaga natural compozitia, iar psyllium-ul si faina absorb excesul de apa si dau structura. Pasarea usoara, nu transformarea in piure fin, lasa cateva bucati intregi de fasole care dau muscatura si tin chiftelutele compacte. Excesul de apa este cel mai frecvent motiv pentru care chiftelutele se desfac in tigaie.<\/li><li>Lasa compozitia la rece minimum 20 de minute. Daca tot ti se pare moale, mai adauga o lingura de faina.<\/li><li>Incinge bine uleiul si tigaia non-aderenta inainte sa pui chiftelutele, ca sa se formeze o crusta care le tine forma.<\/li><li>Prajeste fiecare chifteluta doar 1-2 minute pe fiecare parte si intoarce-o o singura data, cu o spatula lata, ca sa nu se rupa.<\/li><li>Pentru cartofii wedges, nu decoji cartoful: coaja se face crocanta la cuptor si tine feliile intregi.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Sosul de tahini si garnitura<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cartofii wedges copti la cuptor inlocuiesc cartofii prajiti din fast-food, dar fara baia de ulei. Ii tai in felii groase, ii presari cu sare si boia si ii lasi la cuptor cca 30 de minute, pana se rumenesc. Alaturi, sosul de tahini facut din tahini, suc de lamaie si usturoi pisat se prepara in cateva secunde la blender &#8212; adauga apa treptat pana ajunge la consistenta de sos cremos. Chiflele fara gluten Schar fac reteta potrivita si pentru cei cu intoleranta la gluten, iar eu de abia astept sa le gasesc pe rafturile cat mai multor magazine pentru ca sunt geniale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa explorezi si alte variante de burger vegetal, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetal-cu-fasole-adzuki\/\">burgerul cu fasole adzuki<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetarian-cu-linte-cartof-dulce\/\">burgerul cu linte si cartof dulce<\/a>. Pentru tehnica de baza, ti se va parea util <a href=\"https:\/\/gourmandelle.com\/ro\/ghidul-burgerului-vegetarian-perfect-cum-sa-prepari-chiftelute-vegetariene\/\">ghidul burgerului vegetarian perfect<\/a>, iar daca ti-a placut fasolea neagra, gasesti si <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-fasole-neagra\/\">alte retete cu fasole neagra<\/a> de incercat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si pregatire din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelutele se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Le poti pregati din timp si chiar congela: formeaza-le, aseaza-le pe o tava cu hartie de copt, lasa-le la congelator pana se intaresc, apoi muta-le intr-o punga &#8212; asa nu se lipesc intre ele. Le prajesti direct din congelator, doar cu un minut in plus pe fiecare parte. Cartofii wedges sunt cel mai buni proaspat copti, asa ca pe acestia ii pregatesti la final, in timp ce chiftelutele se odihnesc la rece.
