Este o reteta vegana, bogata in proteine vegetale, inspirata de chiftelutele vegetariene de la Ikea. Se gateste in doua etape simple si iese aromata si satioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stiti minunatele chiftelute vegetariene pe care le vinde Ikea? Eu le ador! De fiecare data cand merg pe la Ikea imi iau cate o punga mare de chiftelute congelate. Sunt extrem de versatile, iar mie imi plac in mod special alaturi de cartofi piure si sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru ca mi-era tare dor de ele si nu am mai fost pe la Ikea in ultima vreme, am decis sa imi fac propria versiune de chiftelute vegetariene inspirate de reteta de la Ikea. Am folosit naut, mazare verde, porumb dulce si condimente, iar rezultatul mi-a depasit asteptarile! Folosesc doua conserve de 400g, pentru ca nautul gata fiert se proceseaza usor in pasta. Daca folosesti naut uscat, lasa-l la inmuiat peste noapte si fierbe-l bine, pana se striveste intre degete; daca ramane tare, chiftelutele ies sfaramicioase. Scurge-l bine de zeama inainte de a-l pune in robot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium<\/strong> &#8212; acesta este ingredientul-cheie care tine chiftelutele legate, in lipsa oului. Psyllium-ul absoarbe apa si formeaza un gel care leaga compozitia. De aceea compozitia se lasa la frigider cca 20 de minute, ca psyllium-ul sa isi faca treaba. Cumpara tarate fine, nu boabe intregi, ca sa se distribuie uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; dau un gust usor de branza si o nota savuroasa, fara niciun produs lactat. Sunt foarte folositi in bucataria vegana exact pentru aceasta aroma adanca. Cauta-i la raionul bio sau in magazinele naturiste; au culoare galbuie si fulgi subtiri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut<\/strong> &#8212; intareste legatura si absoarbe excesul de umiditate, ca chiftelutele sa nu se lateasca la copt. Daca nu o gasesti, o poti macina acasa din naut uscat, dat prin rasnita de cafea pana devine pudra fina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mazare verde<\/strong> &#8212; intra atat in chiftelute, cat si in mancare, asa ca o vei folosi de doua ori. Daca o iei congelata, las-o la decongelat inainte, ca sa nu lase apa in plus. Pentru chiftelute poti lasa cateva boabe intregi, ca sa ai textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate si rosii decojite<\/strong> &#8212; formeaza sosul mancarii de mazare. Pasta de tomate concentreaza gustul, iar conserva de rosii decojite cubulete aduce volum si aciditate. Daca sosul iese prea gros, se subtiaza usor cu apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei gras<\/strong> &#8212; da dulceata si culoare sosului. Eu am folosit un mix congelat de diverse culori, foarte comod cand nu ai ardei proaspat. Lasa cateva bucati mai mari de mazare, naut sau porumb, ca chiftelutele sa aiba textura si sa nu fie cauciucate.<\/li>\n<li><strong>Nu sari peste racirea la frigider.<\/strong> Cele 20 de minute la rece nu sunt optionale: atunci psyllium-ul leaga compozitia si chiftelutele isi tin forma la copt. Daca le modelezi imediat, se vor lati pe tava.<\/li>\n<li><strong>Unge-ti mainile cu ulei.<\/strong> Eu asa procedez de obicei: imi ung palmele cu ulei inainte sa formez chiftelutele. Asa nu se lipeste compozitia de maini, iar chiftelutele se acopera cu un strat fin de ulei care le ajuta sa se rumeneasca.<\/li>\n<li><strong>Modeleaza-le mici si egale.<\/strong> Chiftelutele mici se coc uniform in 20-25 de minute la 190-200C. Stii ca sunt gata cand sunt rumenite pe deasupra si ferme la atingere.<\/li>\n<li><strong>Ajusteaza sosul la final.<\/strong> Daca mancarea de mazare iese prea groasa, mai adauga putina apa pana ajunge la consistenta dorita; daca e prea lichida, lasa-o descoperita cateva minute in plus.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Verdeturile<\/strong> &#8212; am pus marar si patrunjel, dar merge la fel de bine doar cu unul dintre ele sau cu un alt verde proaspat, in functie de ce ai la indemana.<\/li>\n<li><strong>Ardeiul<\/strong> &#8212; foloseste ardei proaspat in loc de mix congelat; il calesti putin mai mult, ca sa se inmoaie.<\/li>\n<li><strong>Faina de naut<\/strong> &#8212; daca nu ai, poti incerca cu faina integrala sau cu fulgi de ovaz maruntiti, dar ramai atent la consistenta compozitiei.<\/li>\n<li><strong>Forma<\/strong> &#8212; din aceeasi compozitie poti modela burgeri mai plati in loc de chiftelute, daca vrei sa ii pui in chifla.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mancarea de mazare se pastreaza la frigider, intr-un recipient inchis, 3-4 zile si chiar castiga in aroma a doua zi, dupa ce gusturile se aseaza. Chiftelutele le poti tine separat, ca sa nu se inmoaie prea tare in sos, si le combini la incalzire. Compozitia de chiftelute poate fi pregatita din timp si lasata la frigider, gata de modelat si copt cand ai nevoie. Atat chiftelutele coapte, cat si sosul se congeleaza bine, asa ca poti face o portie dubla pentru zilele aglomerate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac chiftelutele vegetale, mai incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-naut-tahini\/\">chiftelutele de naut cu tahini<\/a> sau varianta de <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-mazare-galbena-cu-tofu\/\">chiftelute de mazare galbena cu tofu<\/a>.
