Doua linguri de faina de in amestecate cu sase linguri de cafea calda formeaza, dupa 10 minute, un gel care leaga aluatul exact ca un ou. Cafeaua are un rol dublu: hidrateaza inul si intensifica gustul de ciocolata, fara ca negresa sa iasa cu gust de cafea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> topit este grasimea care da textura aceea densa si umeda specifica negreselor. Foloseste-l lichid, dar nu fierbinte, ca sa nu topesti restul ingredientelor inainte de vreme. Daca vasul cu aluat este rece, uleiul de cocos se poate intari pe loc, asa ca lucreaza repede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piureul de mere<\/strong> (sau orice gem de fructe) adauga umiditate si putin liant in plus, permitand sa folosesti mai putina grasime fara ca blatul sa iasa uscat. Este un truc clasic in patiseria vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bananele<\/strong> sunt vedeta de la suprafata. Alege-le coapte, dar inca ferme, ca sa se taie frumos pe lung si sa nu se transforme in piure cand le apesi in aluat. Cele prea moi se vor inmuia complet la copt; cele inca verzui nu se vor carameliza. Amestecul excesiv dezvolta glutenul si transforma negresa intr-un blat cauciucat in loc de unul umed.<\/li>\n<li><strong>Aseaza bananele cu fata taiata in sus si apasa-le usor<\/strong> in aluat. Asa raman partial vizibile, iar zaharul de deasupra se poate carameliza direct pe ele.<\/li>\n<li><strong>Stii ca sunt gata cand bananele de la suprafata s-au rumenit si caramelizat<\/strong> iar o scobitoare infipta in blat iese cu cateva firimituri umede, nu cu aluat crud. Cam 40 de minute la 200\u00b0C.<\/li>\n<li><strong>Rabdarea la racire face diferenta.<\/strong> Iata inca un sfat: stiu ca va fi foarte greu, dar trebuie sa asteptati macar 20-30 de minute pentru ca negresa sa se raceasca inainte sa taiati din ea. Foloseste cafea obisnuita calda, tot 6 linguri &#8212; rolul ei este sa hidrateze inul si sa adanceasca gustul ciocolatei.<\/li>\n<li>In loc de piure de mere merge orice gem de fructe, exact cum spune si reteta. Da o nota usor diferita, dar pastreaza umiditatea.<\/li>\n<li>Daca iti plac mai dulci, poti creste putin zaharul brun de deasupra bananelor; pentru un strat caramelizat mai pronuntat, e zona unde ai cea mai mare libertate.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa ce s-au racit complet, negresele cu banane se pastreaza intr-un recipient inchis etans, la temperatura camerei, 2-3 zile. Pentru ca au banane proaspete deasupra, la frigider rezista pana la 4-5 zile, dar bananele de la suprafata se inmoaie cu fiecare zi, asa ca sunt cele mai bune in primele 24-48 de ore. Le poti si congela, taiate in portii; le scoti la temperatura camerei inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca tii la deserturi cu banane, arunca un ochi si pe <a
