Se prepara intr-o singura cratita plus tava de copt, este complet vegana si de post, gata in aproximativ o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De fiecare data cand ma gandesc la mancare de confort, placinta cu legume tip pot pie imi vine imediat in minte. Daca ma intrebati pe mine, ea este chiar definitia comfort food-ului: legume invelite intr-un sos cremos, sub o crusta aurie. Imi place la nebunie sa prepar aceasta placinta cremoasa iarna, mai ales, cand am nevoie de ceva cald si satios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul l-am facut vegan, de post, folosind unt vegetal si lapte de migdale. Pentru legume am ramas la lucruri simple si clasice: patrunjel, cativa catei de usturoi si ceapa verde, in mare parte pentru ca-mi place sa pastrez totul simplu. Cel mai frumos moment? Cand bag furculita in tava pentru prima oara si aluatul crocant pocneste peste sosul cald. Cand il cumperi, alege un foietaj cat mai rece la raft si tine-l la frigider pana in ultimul moment: untul (sau grasimea vegetala) din straturi trebuie sa ramana ferm ca sa creasca frumos la cuptor. Daca se incalzeste si devine moale, straturile se lipesc si crusta nu mai pufaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt vegetal<\/strong> &#8212; 50 g formeaza baza sosului impreuna cu faina. Foloseste un unt vegan ferm, de tip baton, nu o margarina moale tartinabila, pentru ca are mai putina apa si leaga sosul mai bine. Topeste-l la foc mediu, fara sa-l lasi sa se rumeneasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; doua linguri sunt suficiente. Impreuna cu untul topit formeaza un roux, baza clasica a oricarui sos alb. Secretul e sa o gatesti cateva zeci de secunde in unt inainte sa adaugi lichidul, ca sa dispara gustul de faina cruda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de migdale<\/strong> &#8212; doua cani dau cremozitatea sosului. Alege un lapte de migdale neindulcit si fara arome, altfel sosul va iesi dulceag. Adauga-l treptat, amestecand continuu, ca sa nu se formeze cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mustar dijon<\/strong> &#8212; doua lingurite par putin, dar dau sosului adancime si o usoara aciditate care taie din senzatia grasa. Nu il sari: e diferenta dintre un sos alb plat si unul cu caracter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofi si morcovi<\/strong> &#8212; doi cartofi medii si doi morcovi, taiati marunt. Cu cat cuburile sunt mai mici si mai uniforme, cu atat se gatesc mai repede si mai egal. Taie-i de aceeasi marime ca sa fie gata in acelasi timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mazare si spanac congelate<\/strong> &#8212; cate o jumatate de cana din fiecare. Le adaugi direct congelate, spre finalul gatitului, ca sa-si pastreze culoarea vie si sa nu se transforme in terci. Congelatele sunt perfecte aici pentru ca au fost recoltate si congelate la maturitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi, ceapa verde si patrunjel<\/strong> &#8212; doi catei de usturoi, trei cepe verzi si o lingura de patrunjel. Cateva minute de odihna lasa sosul sa se lege, iar feliile ies curate.<\/li>\n<li><strong>Gateste roux-ul pana dispar cocoloasele.<\/strong> Dupa ce presari faina peste untul topit, amesteca pana obtii o pasta neteda, apoi adauga lichidul treptat. Cand nu mai vezi nicio cocoloasa, sosul e pe drumul cel bun.<\/li>\n<li><strong>Lasa sosul sa dea in clocot inainte sa adaugi cartofii.<\/strong> Asa stii ca s-a ingrosat suficient cat sa gateasca legumele uniform. Mai amesteca din cand in cand ca sa nu se prinda de fund.<\/li>\n<li><strong>Verifica cartofii cu furculita.<\/strong> Stii ca legumele sunt gata cand furculita intra usor in cartof. Daca inca opune rezistenta, mai lasa-le cateva minute.<\/li>\n<li><strong>Apasa marginile aluatului pe vas.<\/strong> Lipeste foaia de foietaj de marginile tavii ca sa nu alunece, si fa cateva taieturi mici deasupra ca aburul sa iasa si crusta sa ramana crocanta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alt lapte vegetal:<\/strong> daca nu ai lapte de migdale, merge la fel de bine lapte de soia, de ovaz sau de caju neindulcit. Cele mai cremoase rezultate le dau laptele de soia si cel de caju.<\/li>\n<li><strong>Lichidul de baza:<\/strong> in loc de o cana de supa de legume poti folosi simplu apa, asa cum e prevazut in reteta. Asa ai mereu crusta crocanta, fara sa se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Resturile coapte se pastreaza la frigider 3-4 zile. Le reincalzesc la cuptor, nu la microunde, ca sa-si recapete aluatul crocant &#8212; la microunde foietajul se inmoaie. Daca vrei sa o faci complet de la zero, iti recomand sa-ti pregatesti din timp <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-unt-vegan-de-post-fara-lactoza-acasa\/\">untul vegan de casa<\/a> si <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-lapte-vegetal\/\">laptele vegetal<\/a>, pe care le folosesti apoi direct in sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca aveti o ora libera zilele acestea, va recomand din suflet sa mergeti in bucatarie si sa preparati aceasta placinta cu legume delicioasa. Daca o serviti alaturi de alte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-pranz-pachet\/\">retete de pranz<\/a>, iar daca va hotarati sa o faceti, nu uitati sa va intoarceti aici si sa-mi
