Frunzele se inmoaie 24 de ore in apa cu otet, apoi sarmalutele fierb la foc mic aproximativ 2 ore.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sarmalele sunt, pentru mine, felul de mancare care aduce toata familia la masa de Craciun. Stiu, stiu, sarmalele necesita de obicei destul de mult timp de preparare si ceva rabdare pentru rulat, dar rezultatul merita de fiecare data, mai ales daca v-ati hotarat sa pregatiti ceva cu adevarat special pentru cei dragi de Craciun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chiar daca aceasta reteta va va &#8220;manca&#8221; ceva mai mult timp si rabdare comparand cu majoritatea retetelor de pe blogul meu, eu cred ca merita 100%, mai ales pentru o cina de Craciun. umplutura nu contine niciun produs de origine animala, deci se potrivesc pentru posturile de peste an si pentru cei care nu mananca deloc carne.<\/li>\n<li><strong>Au un aspect spectaculos<\/strong> &#8212; foile de varza rosie dau sarmalutelor o culoare intensa, mov-violet, complet diferita de sarmalele obisnuite, perfecta pentru o masa festiva.<\/li>\n<li><strong>Sunt satioase<\/strong> &#8212; combinatia de orez, ciuperci Champignon, morcov si ceapa face o umplutura consistenta, care tine de foame fara carne.<\/li>\n<li><strong>Se pregatesc excelent in avans<\/strong> &#8212; sarmalele stau bine-mersi congelate pana la 4 luni si pot fi reincalzite foarte usor.<\/li>\n<li><strong>Sunt aromate<\/strong> &#8212; mararul proaspat si uscat, cimbrul, foile de dafin si boabele de piper dau acel gust traditional, de sarma de casa.<\/li>\n<li><strong>Se servesc clasic<\/strong> &#8212; alege o varza compacta, grea pentru marimea ei, cu frunzele exterioare lucioase si fara pete. Spre deosebire de varza murata din reteta clasica, varza rosie cruda are frunze mai rigide si mai groase, asa ca au nevoie de inmuiere ca sa devina suple. Eu indepartez frunzele intregi de pe capatana, le las 24 de ore in 2 litri de apa fierbinte cu 500 ml otet, iar a doua zi sunt suficient de moi cat sa le rulez fara sa crape.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignon<\/strong> &#8212; ai nevoie de 6-7 ciuperci mari, taiate fin. Cumpara ciuperci ferme, cu palaria inchisa si fara zone umede sau inchise la culoare. Ciupercile sunt cele care dau umpluturii corpul si gustul de &#8220;umami&#8221; care inlocuieste carnea, asa ca taie-le marunt ca sa se distribuie uniform in fiecare sarma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul<\/strong> &#8212; folosesti o cana de orez. Important: orezul se caleste impreuna cu ceapa si ciupercile si se gateste pana absoarbe lichidele, dar nu pana e complet fiert. Asa ramane loc pentru ca bobul sa se umfle in timpul celor 2 ore de fierbere a sarmalelor, iar umplutura nu iese nici cruda, nici pastoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; ai nevoie de 2 cepe mari tocate. Caleste-le in ulei pana devin translucide inainte de a adauga orezul; acesta este pasul care construieste baza de gust a umpluturii, asa ca nu te grabi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovii<\/strong> &#8212; 2 morcovi mici razuiti, adaugati la final, dupa ce iei oala de pe foc. Dau umpluturii dulceata naturala si un plus de culoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mararul<\/strong> &#8212; folosesti \u00bd cana de marar proaspat tocat fin, plus o lingurita de marar uscat. Mararul proaspat se imparte: o parte intra in umplutura, restul se presara intre straturile de sarmale in cratita. Mararul este aroma care face diferenta intre o sarma banala si una cu adevarat parfumata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate<\/strong> &#8212; 6 linguri, impartite si ele in doua: jumatate intra in umplutura, jumatate se presara intre straturi impreuna cu mararul. Da culoare, un gust usor acrisor si leaga sosul in care fierb sarmalele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; 3 foi de dafin, 1 lingura boabe de piper, cimbru uscat, marar uscat, sare si piper. Apa fierbinte cu otet le face suple si le ajuta sa-si pastreze culoarea. Stii ca sunt gata cand se indoaie usor fara sa crape.<\/li>\n<li><strong>Foloseste frunzele potrivite la locul potrivit.<\/strong> Pastreaza frunzele fine, intregi si mici pentru rulat si incearca sa le faci de aceeasi dimensiune. Tulpinile groase din frunzele mari le indepartezi, iar frunzele rupte sau prea mari le pui pe fundul cratitei si peste ultimul strat de sarmale.<\/li>\n<li><strong>Ruleaza strans.<\/strong> Pune o lingura de umplutura, acopera cu marginea de la baza frunzei, indoaie marginile laterale si ruleaza ferm. Daca sarmaua e rulata lejer, se desface in timpul celor 2 ore de fierbere.<\/li>\n<li><strong>Lasa umplutura sa se raceasca<\/strong> inainte sa formezi sarmalele. Umplutura calda e greu de manevrat si frunzele se rup mai usor.<\/li>\n<li><strong>Verifica apa din cand in cand.<\/strong> Sarmalele fierb la foc mic, acoperite, in jur de 2 ore. Daca vezi ca a scazut prea mult lichidul, mai adauga cate o cana de apa fierbinte ca sa nu se prinda de fundul cratitei.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varza alba sau murata<\/strong> &#8212; daca nu gasesti varza rosie sau preferi gustul clasic, poti folosi foi de varza alba oparite ori foi de varza murata. Le poti tine la frigider, intr-un recipient inchis, cateva zile, si le reincalzesti pe aragaz, la foc mic, sau in cuptor. La congelator stau bine-mersi pana la 4 luni si pot fi reincalzite foarte usor, desi trebuie sa iei in considerare faptul ca varza s-ar putea sa se mai inmoaie putin fata de momentul in care le-ai gatit prima oara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca le pregatesti pentru o cina de Craciun, poti rula sarmalele cu o zi inainte si le pui la fiert in dimineata zilei in care le servesti. Eu le servesc calde, cu mamaliga, verdeata proaspata si <a href=\"https:\/\/gourmandelle.com\/ro\/smantana-de-post-cu-probiotice\/\">smantana de post cu probiotice<\/a>, exact ca pe cele clasice. Pentru o masa festiva completa, le poti combina cu alte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-vegetariene-de-craciun\/\">retete vegetariene de Craciun<\/a> sau cu o varianta diferita de <a
