Ciuperca devine umplutura, pastele devin crusta, iar la tigaie capeti o friptura crocanta, fara gluten si fara carne, gata in mai putin de o ora de gatit activ.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am auzit prima oara de seitan, si cat de perfect este ca inlocuitor de carne, acum un an. Cam in aceeasi perioada am aflat ca glutenul nu este tocmai prietenul meu, asa ca a fost o veste destul de trista pentru mine &#8212; nu mai puteam sa incerc retetele de &#8220;carne falsa&#8221; cu seitan. Aproape am renuntat la idee, crezand ca trebuie sa ma multumesc cu retetele mele de burgeri vegetarieni (care sunt foarte bune, btw) ca sa-mi satisfac poftele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ei bine, totul s-a schimbat acum cateva saptamani, cand mi-a venit super-ideea de a face o friptura vegana, fara gluten. Ideea mi-a venit cand am observat cum se comporta pastele fara gluten daca le lasi prea mult in apa sau le bagi la frigider: devin lipicioase si se leaga intr-o pasta. Atunci mi-am dat seama ca ar fi inlocuitorul perfect pentru seitan. Alege ciupercile cele mai mari si mai carnoase pe care le gasesti, pentru ca pe acestea le folosesti intregi, drept umplutura. Cauta exemplare ferme, cu palaria intacta si fara zone moi sau umede; cele proaspete au un miros usor dulce, nu acrisor. Coditele, mai tari si mai cauciucate, nu se arunca: le feliezi si le incorporezi in aluatul de paste, ca sa adauge fibra mestecabila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Paste fara gluten pe baza de porumb<\/strong> &#8212; acesta este &#8220;trucul&#8221; care inlocuieste seitanul. Eu am folosit penne Schar. Pastele de porumb se umfla si devin lipicioase cand sunt fierte foarte mult si racite, exact comportamentul de care ai nevoie ca sa formezi crusta. Fierbe-le mai mult decat al dente, cca 15 minute, pana devin foarte moi &#8212; pastele inca &#8220;tari&#8221; nu se vor lega intr-un aluat coeziv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de carob (roscove)<\/strong> &#8212; carobul intra in aluatul de paste si face doua lucruri: da culoarea bruna, de crusta rumenita, si o nota usor dulce-pamantoasa care echilibreaza condimentele afumate. Nu il inlocui cu cacao, pentru ca ar aduce amareala; carobul este natural dulce, asa ca aroma ramane echilibrata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata si boia dulce<\/strong> &#8212; aceasta pereche da aroma de gratar. Boia afumata aduce fumul, iar cea dulce aduce culoarea rosie-caramizie si dulceata catifelata. Cumpara boia cat mai proaspata, intr-un ambalaj opac: boiaua veche isi pierde aroma si culoarea, iar diferenta se simte imediat in gustul final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mixul de condimente<\/strong> &#8212; ienibahar, cimbru, coriandru, piper, seminte de mustar macinate, pudra de usturoi, pudra de ceapa, foaie de dafin macinata si chimen. Daca ai condimentele intregi, nemacinate, macina-le pe toate deodata intr-o rasnita sau blender chiar inainte de folosire: condimentele macinate proaspat sunt mult mai aromate decat cele cumparate gata macinate, care isi pierd uleiurile volatile in timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sos de barbecue si otet<\/strong> &#8212; otetul intra in marinada ciupercilor si le da o aciditate care taie din &#8220;greutatea&#8221; preparatului, in timp ce sosul de barbecue, adaugat spre finalul gatitului ciupercilor, lipeste aroma afumata de gratar. Adauga sosul abia in ultimele minute, ca sa nu se arda zaharurile din el.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fierbe pastele pana sunt foarte moi.<\/strong> Greseala cea mai frecventa este sa le scoti al dente. Aici vrei opusul: pastele trebuie lasate cca 15 minute, ca sa devina lipicioase si sa se proceseze intr-o pasta care se modeleaza usor in jurul ciupercii.<\/li>\n<li><strong>Marineaza ciupercile peste noapte daca ai timp.<\/strong> Pot fi gatite si imediat, dar o noapte in frigider, in marinada cu condimente, ulei, otet si apa, lasa aromele sa patrunda adanc in ciuperca.<\/li>\n<li><strong>Raceste aluatul de paste minim 30 de minute.<\/strong> Compozitia de paste trebuie sa stea la frigider ca sa se intareasca; abia atunci se modeleaza frumos in crusta. Daca o folosesti calda, se va lipi de maini si nu va tine forma.<\/li>\n<li><strong>Imparte mixul de condimente in doua de la inceput.<\/strong> O jumatate merge la marinada ciupercilor, cealalta in aluatul de paste. Eu am ales tigaia, pentru ca da o crusta crocanta delicioasa, dar gratarul aduce in plus aroma afumata.<\/li>\n<li><strong>Alte paste fara gluten.<\/strong> Daca nu gasesti penne, merge orice forma scurta de paste fara gluten pe baza de porumb; ideea este sa fie paste care se proceseaza intr-o pasta lipicioasa dupa fierbere lunga.<\/li>\n<li><strong>Ajusteaza nivelul de afumat.<\/strong> Daca iti place gustul mai intens de gratar, mareste cantitatea de boia afumata sau adauga mai mult sos de barbecue spre final.<\/li>\n<li><strong>Fara sos de barbecue.<\/strong> Daca nu ai sos de barbecue, te poti baza doar pe mixul de condimente si pe boiaua afumata pentru aroma de gratar; rezultatul va fi ceva mai putin dulce, dar tot savuros.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Daca nu vrei sa mananci imediat toate cele ~8 fripturi vegane rezultate din reteta, le poti congela. Dupa gatire si racire, eu de obicei fac o cantitate mai mare, le bag individual in pungute Ziploc si le pun la congelator. Asa ai mereu o portie consistenta la indemana, pe care o reincalzesti rapid in tigaie pana redevine crocanta. Marinarea ciupercilor peste noapte se poate face si ea in avans, deci poti imparti munca pe doua zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele fara gluten care folosesc ciuperci Pleurotus, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-burta-vegana-supa-acra-de-ciuperci-pleurotus\/\">ciorba de burta vegana cu ciuperci Pleurotus<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/chec-sarat-fara-gluten-cu-ciuperci\/\">checul sarat fara gluten cu ciuperci<\/a>. Pentru un alt fel principal copios, fara carne, merge de minune si <a href=\"https:\/\/gourmandelle.com\/ro\/drob-vegetarian-cu-linte-ciuperci\/\">drobul vegetarian cu linte si Daca ai ingrediente intregi, nemacinate, este ideal sa pui toate ingredientele mentionate mai sus intr-o rasnita sau un blender si sa le macini pe toate deodata. Imparte in doua mixul de condimente.<\/div><\/li><li id=\"wprm-recipe-163790-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pune ciupercile intr-un bol. Adauga jumatate din mixul de condimente, 2 linguri de ulei si sare. Adauga 1\/2 pahar cu apa si otetul. Amesteca. Ia ~2-3 linguri de aluat si infasoara-l in jurul unei bucati de ciuperca intreaga. Ciuperca va fi un fel de umplutura, iar aluatul va fi crusta.
