Timpul efectiv de preparare e de doar o jumatate de ora, iar restul il face cuptorul. Am testat o varianta similara si cu orez brun si, desi e foarte gustoasa, prefer textura umpluturii cu orez alb cu bob rotund: iese mult mai pufoasa, iar bobul leaga frumos compozitia in loc sa o lase sfaramicioasa. E genul de mancare pe care o pregatesc cand vreau ceva consistent si reconfortant, dar fara sa stau ore intregi in bucatarie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un detaliu la care tin foarte mult: aleg mereu ardei grasi rosii sau portocalii. Cei verzi, dupa parerea mea, pur si simplu nu au gust, asa ca nu merita locul in farfurie. Iar partea mea preferata e finalul, cand pornesc functia de grill si las ardeii sa se rumeneasca putin la partea de sus. Cauta-i pe cei cu fundul lat, ca sa stea drepti in cratita, si cu peretii grosi: vor rezista mai bine la cuptor si nu se vor desface. Cei verzi sunt mai amari si, dupa parerea mea, nu au gustul dulce-copt pe care il vrei aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez alb cu bob rotund<\/strong> &#8211; bobul rotund elibereaza mai mult amidon decat cel cu bob lung, asa ca leaga umplutura si o face cremoasa. Nu il fierbe complet la plita: se va inmuia oricum la cuptor, absorbind aroma celorlalte ingrediente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci Champignon<\/strong> &#8211; 500 g maruntite aduc o textura carnoasa care inlocuieste perfect carnea. Cauta ciuperci ferme, cu palaria inchisa si fara zone vinete. Marunteste-le marunt si uniform, ca sa elibereze apa la sotare si sa se integreze in umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanac<\/strong> &#8211; 300 g maruntit se ofileste mult la caldura, deci pare mult la inceput, dar se reduce considerabil. Adauga-l la final, dupa ciuperci si orez, ca sa isi pastreze culoarea verde si sa nu se gateasca prea mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8211; cimbrul uscat, oregano, coriandrul macinat si boiaua dulce sunt cele care dau profunzime umpluturii. Boiaua aduce culoare si o dulceata afumata, iar coriandrul macinat o nota calda. Adauga-le odata cu ciupercile, ca sa aiba timp sa se deschida la caldura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjelul<\/strong> &#8211; o jumatate de cana de patrunjel tocat se adauga spre final, impreuna cu spanacul, ca sa pastreze prospetimea si aroma. Daca il pui prea devreme, isi pierde din savoare.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Nu fierbe orezul complet la plita. Compozitia trebuie sa ramana putin al dente: orezul se va inmuia la cuptor absorbind aburul si aroma. Daca il gatesti complet acum, va iesi lipicios.<\/li>\n<li>Alege o cratita sau tigaie care intra la cuptor si in care ardeii stau drepti, lipiti unul de altul. Asa nu se rastoarna si se gatesc uniform.<\/li>\n<li>Fixeaza capacelele taiate cu scobitori. E un truc simplu care tine umplutura la locul ei si ajuta ardeii sa se gateasca la abur in interior.<\/li>\n<li>Adauga apa in cratita cat sa acopere doua treimi din inaltimea ardeilor. Aburul format ii gateste din toate partile si ii face moi, fara sa se usuce.<\/li>\n<li>Stii ca sunt gata cand peretii ardeilor sunt moi la furculita, iar partea de sus s-a rumenit usor sub grill. Daca alegi orezul brun, fierbe-l partial inainte, fiindca are nevoie de mai mult timp.<\/li>\n<li><strong>Versiune de post \/ vegana<\/strong> &#8211; sari peste toppingurile cu lactate (feta, smantana) si serveste ardeii cu tofu ras sau pasta de rosii. Umplutura in sine este deja fara produse de origine animala.<\/li>\n<li><strong>Alte legume in umplutura<\/strong> &#8211; poti adauga morcov ras sau dovlecel maruntit pentru mai multa dulceata si volum, calindu-le impreuna cu ceapa.<\/li>\n<li><strong>Mai condimentat<\/strong> &#8211; daca iti place picant, adauga un varf de ardei iute macinat sau fulgi de chili odata cu celelalte condimente.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ardeii umpluti se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile, si dupa parerea mea sunt chiar mai gustosi a doua zi, cand aromele au avut timp sa se imbine. Ii reincalzesti la cuptor la 180C, acoperiti, ca sa nu se usuce, sau la microunde pentru o portie rapida.
