Aceasta reteta de baza foloseste doar 7 g drojdie uscata, 450 g faina si 300 ml apa calduta, se lasa la dospit pana isi dubleaza volumul si se coace la 220C pana devine aurie. Nu mi-a placut sa fac paine nici macar cand eram in carantina in timpul pandemiei, inchisi cu totii in casa, cand toata lumea isi pornea maiaua si umplea bucataria de faina. Dar imi place la nebunie sa fac focaccia, si cred ca diferenta sta tocmai in cat de iertatoare este: nu trebuie sa framanti perfect, nu trebuie sa nimeresti o forma anume, iar uleiul de masline iti acopera multe greseli.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine focaccia nu e o simpla paine &#8212; e o tava plina de arome, cu rosii cherry care se coc in aluat, busuioc proaspat deasupra si fulgi de sare de mare care trosnesc sub dinte. Tu doar amesteci la inceput si modelezi la final.<\/li>\n<li><strong>E aproape imposibil de stricat.<\/strong> Aluatul de focaccia este foarte umed si iertator &#8212; nu trebuie sa il framanti pana la perfectiune si nici sa ii dai o forma anume.<\/li>\n<li><strong>Are textura aceea de care te indragostesti.<\/strong> Pufoasa si cu gauri pe interior, crocanta si rumena la margini, exact cum trebuie sa fie o focaccia buna.<\/li>\n<li><strong>Este vegana si de post.<\/strong> Singura grasime din ea este uleiul de masline extravirgin, asa ca o poti face in orice perioada de post.<\/li>\n<li><strong>O personalizezi cum vrei.<\/strong> Rosii cherry, busuioc, mix de seminte sau orice alt topping iti place &#8212; aluatul de baza ramane acelasi.<\/li>\n<li><strong>Se face dintr-un singur castron.<\/strong> Mai putine vase de spalat, ceea ce conteaza mult cand cocesti des.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdie uscata<\/strong> &#8212; 7 g sunt suficiente pentru 450 g de faina. Cel mai important lucru este sa verifici data de expirare inainte sa o folosesti: drojdia expirata pur si simplu nu se mai activeaza si aluatul nu va creste. Stii ca drojdia e vie atunci cand, dupa cele 5 minute in apa calduta cu zahar, amestecul devine spumos si cremos la suprafata. Daca dupa 5-10 minute nu se intampla nimic, mai bine arunci totul si o iei de la capat cu drojdie proaspata, decat sa pierzi faina pe un aluat care nu va dospi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; poti folosi faina alba, integrala sau o combinatie 50-50, asa cum am facut eu. Combinatia 50-50 imi place pentru ca pastreaza miezul pufos al fainii albe, dar adauga un gust mai plin si putina fibra de la cea integrala. Daca folosesti numai faina integrala, aluatul va fi mai dens si poate cere ceva mai multa apa, pentru ca tarata absoarbe mai mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa calduta<\/strong> &#8212; temperatura conteaza mai mult decat crezi. Apa trebuie sa fie calduta la deget, nu fierbinte: caldura prea mare omoara drojdia, iar apa rece o adoarme si dospirea dureaza la nesfarsit. Daca o simti placuta pe incheietura mainii, e perfecta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar brun<\/strong> &#8212; cele 2 lingurite de zahar nu sunt pentru dulceata, ci hrana pentru drojdie: zaharul ii da pornirea care face amestecul sa spumeze in primele minute. Focaccia foloseste in total 5 linguri de ulei (1 pentru uns castronul, 2 pentru tava, 2 pentru stropit deasupra) si uleiul este, de fapt, gustul principal al painii. Un ulei extravirgin bun, fructat, face toata diferenta intre o focaccia banala si una care miroase a Italia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii cherry, busuioc proaspat si mix de seminte<\/strong> &#8212; acestea sunt toppingul clasic. Rosiile cherry se apasa in gaurelele aluatului si se coc dulci si concentrate, busuiocul proaspat se pune deasupra abia dupa ce iese din cuptor, ca sa nu se innegreasca, iar mixul de seminte adauga crocant. Toate sunt optionale &#8212; poti pune doar sare si ulei pentru o focaccia simpla.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Asteapta dublarea volumului, nu ceasul.<\/strong> Cele aproximativ 4 ore de dospit sunt o estimare. Intr-o bucatarie calduta aluatul creste mai repede, iar intr-una rece dureaza mai mult. Mergi dupa volum: aluatul trebuie sa isi dubleze marimea si sa fie umflat si plin de aer.<\/li>\n<li><strong>Unge-ti mainile cu apa sau ulei cand intinzi aluatul.<\/strong> Aluatul de focaccia este foarte lipicios, iar fara mainile unse se va lipi de degete in loc sa se intinda. Cu mainile umede aluneca usor in colturile tavii.<\/li>\n<li><strong>Apasa cu degetele pana la fundul tavii pentru gaurele adanci.<\/strong> Acele gropite tin uleiul si rosiile la locul lor si dau focacciei aspectul ei caracteristic. Nu te teme sa apesi ferm &#8212; aluatul revine.<\/li>\n<li><strong>Stii ca este gata cand devine aurie deasupra.<\/strong> Cele 20-30 de minute la 220C sunt un interval; cuptoarele difera. Daca treci la integrala 100%, adauga apa cu lingura, pana ce aluatul ramane lipicios, dar lucrabil.<\/li>\n<li><strong>Alte toppinguri<\/strong> &#8212; in loc de rosii cherry si busuioc, poti pune felii subtiri de ceapa rosie, masline, rozmarin proaspat sau felii de usturoi. Se pastreaza bine 1-2 zile la temperatura camerei, intr-o punga de hartie sau invelita lejer intr-un prosop curat &#8212; evita recipientele etanse, pentru ca umezeala ii inmoaie crusta. Cand vrei sa o reincalzesti, baga-o cateva minute in cuptorul incins, nu la microunde, ca sa isi recapete crocantul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru pastrare mai lunga, focaccia se congeleaza foarte bine. Lasa-o sa se raceasca complet, taie-o in bucati si congeleaza-le in pungi cu fermoar; le reincalzesti direct din congelator in cuptor. Aluatul in sine se poate prepara si in avans &#8212; il poti lasa la dospit incet, peste noapte, la frigider, in loc de cele 4 ore la temperatura camerei, ceea ce ii da chiar mai multa aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut sa cochi paine de casa, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/paine-cu-malai-cornbread\/\">painea cu malai (cornbread)<\/a> sau, pentru o aroma de busuioc asemanatoare cu cea de aici, <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-pesto-de-busuioc\/\">humusul cu pesto de busuioc<\/a>. Iar daca vrei sa folosesti acelasi aluat cu drojdie pentru altceva, arunca o privire peste <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-pizza-de-post-vegane\/\">retetele de pizza de post,
