{"id":15592,"date":"2016-12-21T17:30:56","date_gmt":"2016-12-21T15:30:56","guid":{"rendered":"http:\/\/gourmandelle.com\/ro\/?p=15592"},"modified":"2026-06-14T21:18:47","modified_gmt":"2026-06-14T19:18:47","slug":"tort-vegan-cu-visine-si-ciocolata","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/tort-vegan-cu-visine-si-ciocolata\/","title":{"rendered":"Tort vegan cu visine si ciocolata"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Tortul vegan cu visine si ciocolata este versiunea mea simplificata si veganizata a clasicului tort &#8220;Padurea Neagra&#8221;: un blat de cacao fara gluten, insiropat si umplut cu un strat de jeleu de visine si o crema bogata de ciocolata pe baza de lapte de cocos gras. Se face din ingrediente la indemana si nu cere skilluri de cofetar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru a celebra acest final de an, am decis sa imi supun la un test &#8220;skillurile&#8221; mele de cofetar si sa incerc o reteta mai complicata de tort. Dupa cum ati observat, patiseria nu e punctul meu forte: nu ma omor dupa dulciuri si nici nu imi place sa le fac. Bineinteles, ca tot in stilul meu caracteristic l-am facut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chiar daca e inspirat de faimoasa reteta &#8220;Padurea Neagra&#8221;, l-am simplificat si veganizat, astfel incat sa imi fie pe plac si nici sa nu necesite masterskills de cofetar pentru a-l face. Eu am optat pentru un gust mai bogat in ciocolata, asa ca am inlocuit crema alba de la tortul clasic &#8220;Padurea Neagra&#8221; cu o crema similara dar in care am adaugat si cacao. Foloseste lapte de cocos cu un continut mai mare de grasime, nu cel lichid de baut. Trebuie sa aiba o textura ca de smantana grasa. Eu il folosesc pe cel de la Delhaize. Tine cutia la frigider minim o ora inainte de folosire: la rece, partea grasa se separa si se intareste, iar crema se bate frumos si tine forma. Daca laptele e cald sau apos, crema ramane fluida si nu se va putea intinde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina fara gluten<\/strong> &#8212; am folosit faina fara gluten Schar. Eu am folosit Farina de la Schar pentru ca tocmai mi se terminase Mix It Universal. Cand cumperi un mix fara gluten, alege unul &#8220;universal&#8221; sau pentru patiserie, care contine deja amidon si agent de legare (de regula guma xantan), pentru ca acela imita cel mai bine glutenul si tine blatul legat. Daca preferi, poti folosi si faina obisnuita cu gluten, in aceeasi cantitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Visine fara samburi<\/strong> &#8212; am folosit visine congelate. Sunt ideale pentru ca au deja zeama si se transforma usor in jeleu, iar la blender nu mai trebuie sa adaugi apa. Daca folosesti visine proaspete, scoate-le samburii cu rabdare. Pe langa cele din strat, ai nevoie si de un borcan de visine in sirop slab indulcit: siropul insiropeaza blaturile, iar visinele intregi se presara intre straturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> &#8212; ea ingroasa stratul de visine. La caldura, amidonul din tapioca se hidrateaza si leaga sucul visinelor intr-un jeleu lipicios, fara sa lase gust. Nu o inlocui cu faina obisnuita aici, pentru ca nu da aceeasi textura translucida. Important: nu adauga apa in blender, altfel jeleul ramane prea lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cacao<\/strong> &#8212; intra in blat (5 linguri), in crema (4 linguri, optional) si la decor. Foloseste o cacao pudra neindulcita de calitate, pentru ca ea da culoarea inchisa si gustul intens. Daca vrei crema similara cu cea de la tortul Padurea Neagra, las-o alba si nu mai adauga cacao in ea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de mere si bicarbonat de sodiu<\/strong> &#8212; aceasta pereche face blatul sa creasca. Cand otetul acid intalneste bicarbonatul, se elibereaza dioxid de carbon care afaneaza aluatul, exact rolul pe care l-ar avea ouale intr-un blat clasic. Pune cutia la rece de cu seara, ca sa fii sigur.<\/li>\n<li><strong>Adauga otetul ultimul si lucreaza repede.<\/strong> Reactia cu bicarbonatul incepe imediat, deci dupa ce torni otetul amesteci scurt si bagi tortul la cuptor fara sa zabovesti, ca blatul sa creasca frumos.<\/li>\n<li><strong>Verifica blatul cu o scobitoare.<\/strong> Dupa ~25 de minute la 180C, infige o scobitoare in mijloc: daca iese curata, e copt. Lasa-l sa se raceasca complet inainte sa-l feliezi, altfel se sfarama.<\/li>\n<li><strong>Amesteca jeleul de visine continuu.<\/strong> Dupa primele 5 minute incepe sa devina lipicios; amesteca fara pauza inca 15 minute la foc mic-mediu. Stii ca e gata cand are textura de budinca lipicioasa si lasa urma lingurii.<\/li>\n<li><strong>Bate crema de ciocolata cu paleta, nu cu lamele.<\/strong> Foloseste ustensila de batut, nu lamele de tocat, si bate cca 15 minute pana se ingroasa si devine cremoasa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta clasica &#8220;Padurea Neagra&#8221;.<\/strong> Daca vrei crema similara cu cea de la tortul original, las-o alba si nu mai adauga cacao in ea &#8212; vei avea contrastul clasic alb-visiniu.<\/li>\n<li><strong>Cu gluten.<\/strong> Daca nu ai nevoie de varianta fara gluten, inlocuieste faina Schar cu faina alba obisnuita, in aceeasi cantitate.<\/li>\n<li><strong>Alt lapte vegetal.<\/strong> Laptele de soia din blat poate fi inlocuit cu alt lapte vegetal mai consistent. Asa cremele se intaresc, straturile se aseaza si se feliaza curat. Practic e desertul ideal de preparat in avans &#8212; il faci de cu seara si a doua zi doar il scoti din forma, il acoperi cu crema ramasa si il decorezi cu cacao, ciocolata neagra rasa si visine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pastreaza tortul la frigider, acoperit, si consuma-l in 3-4 zile. Fiind un tort umed, cu jeleu de visine, se simte cel mai bine in primele zile. Daca iti plac deserturile cu ciocolata si fructe, mai gasesti pe blog si <a href=\"https:\/\/gourmandelle.com\/ro\/tort-fara-gluten-cu-ciocolata-fructe\/\">tort fara gluten cu ciocolata si fructe<\/a>, un <a href=\"https:\/\/gourmandelle.com\/ro\/tort-raw-vegan-de-ciocolata-cu-zmeura\/\">tort raw vegan de ciocolata cu zmeura<\/a> sau, daca vrei ceva rapid, <a
