Spanacul se ofileste in cateva secunde, iar parmezanul ras (optional) leaga totul intr-un fel principal satios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta asta s-a nascut din zilele mele la Milano. Cand esti in Italia, mananci precum italienii, nu-i asa? Inca de cand am ajuns aici, am mancat paste la greu &#8212; nu sunt deloc obisnuita sa le mananc atat de des, insa se fac usor, rapid, exista o multime de tipuri de paste si sunt si ieftine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">E drept ca am cam fost &#8220;fortata&#8221; de imprejurari sa tin o dieta bazata pe paste. In magazinele de aici nu gasesc aceeasi varietate de verdeturi si legume proaspete ca in Bucuresti, si cele care exista sunt si la un pret mult mai mare. Asa ca am invatat sa scot maximul din ingrediente simple: o oala, un suc de rosii bun si o mana de spanac. Daca alegi paste fara gluten, fii atent ca acestea elibereaza mai mult amidon si se inmoaie mai repede, asa ca verifica-le cu un minut mai devreme decat scrie pe pachet. Tot amidonul acela este, de fapt, un avantaj aici: ajuta sosul de rosii sa se lege mai cremos in jurul pastelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de rosii<\/strong> &#8212; cele 500 ml de suc de rosii sunt baza sosului, asa ca alege unul cu gust curat si fara zahar adaugat. Citeste eticheta: ideal e sa contina doar rosii (si eventual putina sare). Un suc prea acru se echilibreaza usor cu un praf de sare in plus si cu dulceata naturala a usturoiului calit in pasta fierbinte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; cei 6 catei pisati par multi, dar in sosul de rosii se domolesc si dau profunzime, nu agresivitate. Alege catei fermi, fara coltul verde incoltit in mijloc, pentru ca acela aduce un gust amarui. Ii adaugi peste paste cand acestea sunt deja in suc, ca usturoiul sa se gateasca bland si sa nu se arda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanac proaspat<\/strong> &#8212; cele 200 g de spanac proaspat sunt vedeta felului. Alege frunze de un verde intens, fara pete galbene sau zone moi, si spala-le bine inainte. Se gateste fulgerator, asa ca intra ultimul in oala &#8212; il adaugi in doua transe si amesteci pana se abureste si scade in volum, ramanand totusi verde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Busuioc proaspat<\/strong> &#8212; o mana de busuioc proaspat ridica intregul fel la nivel de bucatarie italiana. Rupe frunzele cu mana in loc sa le tai cu cutitul, ca sa nu se innegreasca, si adauga-le aproape de final ca aroma sa ramana vie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Parmezan ras<\/strong> &#8212; cele 2 linguri de parmezan sunt optionale, dar adauga acea nota sarata si umami care leaga totul. Pentru o varianta vegana, il inlocuiesti cu fulgi de drojdie inactiva, care dau un gust asemanator, usor branzos. Razuieste parmezanul proaspat din bucata, nu cumparat deja ras &#8212; se topeste mai frumos in pastele fierbinti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu arunca toata apa de fierbere.<\/strong> Lasa cca jumatate de pahar de apa pe fundul oalei &#8212; acea apa amidonata este cheia unui sos care imbraca pastele in loc sa alunece de pe ele.<\/li>\n<li><strong>Lasa spaghetele usor al dente la primii 8 minute.<\/strong> Ele continua sa fiarba inca cateva minute in sucul de rosii, asa ca daca le fierbi complet de la inceput, vor iesi prea moi la final.<\/li>\n<li><strong>Adauga spanacul in doua transe.<\/strong> Mai intai busuiocul si una-doua maini de spanac; amesteci pana se abureste, apoi adaugi restul. Vei obtine acelasi gust umami, branzos, fara niciun produs lactat.<\/li>\n<li><strong>Fara gluten:<\/strong> foloseste spaghete fara gluten. Fierbe-le cu un minut mai putin si verifica textura, pentru ca se inmoaie mai repede.<\/li>\n<li><strong>Mai picant sau mai bland:<\/strong> ajusteaza fulgii de chili dupa gust &#8212; de la un singur praf pentru o caldura discreta, pana la doua sau mai multe pentru o nota aprinsa.<\/li>\n<li><strong>Mai multa verdeata:<\/strong> daca iti place spanacul, dubleaza cantitatea. Se ofileste mult, asa ca o portie generoasa devine, de fapt, modesta dupa gatire.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aceste spaghete sunt cele mai bune proaspete, cand spanacul e inca de un verde viu si sosul abia s-a legat. Daca raman resturi, pastreaza-le la frigider intr-un recipient inchis pana la 2-3 zile. Pastele vor absorbi din sos pe masura ce stau, asa ca la reincalzire adauga un strop de apa sau de suc de rosii ca sa le readuci la o consistenta cremoasa. Incalzeste-le bland, pe foc mic, amestecand des, in loc sa le usuci la cuptorul cu microunde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru o cina rapida cap-coada, lasa-le sa fie steaua serii alaturi de o salata simpla. Daca vrei sa ramai pe acelasi val de paste italienesti, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/spaghete-cu-avocado-busuioc-fara-gluten\/\">spaghetele cu avocado si busuioc<\/a> sau intensele <a href=\"https:\/\/gourmandelle.com\/ro\/spaghete-alla-puttanesca\/\">spaghete alla puttanesca<\/a>. Iar daca esti indragostit de spanac la fel de mult ca mine, o <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-spanac\/\">salata de spanac<\/a> proaspata completeaza perfect
