Se fac dintr-un naut la conserva pasat, amestecat cu ceapa, patrunjel si un liant din tarate de psyllium, apoi modelate si prajite rapid in tigaie. Asa au aparut aceste chiftelute: nautul le da corp si o textura consistenta, iar rozmarinul proaspat le ridica complet aroma. Le prepar cel putin o data pe saptamana si aproape de fiecare data mai schimb cate ceva, insa varianta cu rozmarin ramane una dintre preferatele mele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele care conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baza este <strong>nautul fiert la conserva<\/strong> (800 g). Il scoti din conserva, il clatesti si il pasezi cu furculita sau cu un mixer vertical. Nu il pasa complet in pasta &#8212; daca lasi cateva bucatele intregi, chiftelutele au o textura mai placuta si nu ies gumate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> (4 linguri) sunt liantul care tine compozitia legata, fara ou. Psyllium absoarbe lichidul si formeaza un gel care leaga totul, asa ca poti pastra reteta 100% vegetala. Daca preferi, poti inlocui psyllium cu un ou mare batut, dar in cazul asta reteta nu mai este vegana. <strong>Fulgii de drojdie inactiva<\/strong> (4 linguri) sunt optionali, dar ii recomand din suflet: adauga o aroma usor branzoasa si adancime savuroasa. <strong>Rozmarinul proaspat<\/strong> tocat marunt (4 linguri) este vedeta &#8212; foloseste-l proaspat, nu uscat, pentru acea aroma vie. Dupa ce ai amestecat toate ingredientele, aceasta trebuie sa fie lipicioasa si usor de modelat cu mainile. Daca ti se pare prea moale si nu se aduna, ai doua variante simple: mai adaugi putina faina, lingura cu lingura, pana ajungi la consistenta dorita, sau lasi bolul cca 15 minute la frigider. La rece, psyllium apuca sa absoarba lichidul si compozitia se intareste singura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand prajesti, incinge bine putin ulei intr-o tigaie &#8212; nu trebuie sa folosesti mult. Prajeste chiftelutele 2-3 minute pe fiecare parte, pana capata o crusta aurie. Nu le intoarce prea devreme: lasa-le sa se rumeneasca bine pe o parte inainte sa le misti, altfel risti sa se rupa. Dintr-o portie iti ies 15+ chiftelute.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce le servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelutele de naut cu rozmarin merg perfect calde, cu un sos de iaurt vegetal sau un dressing de tahini alaturi. Le poti pune si intr-un <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegan-perfect\/\">burger vegan<\/a> in loc de chiftea clasica, sau intr-un <a href=\"https:\/\/gourmandelle.com\/ro\/sandvis-cu-naut-pesto\/\">sandvis cu naut si pesto<\/a> pentru un pranz rapid. Le poti reincalzi in tigaie sau la cuptor ca sa isi recapete crusta. Merg si la congelator: le asezi pe o tava, le congelezi separat, apoi le pui intr-o punga si tii pana la 2-3 luni. Compozitia cruda se pastreaza si ea o zi la frigider, ceea ce e ideal daca vrei sa o pregatesti dinainte.
