Mi-a dat ocazia sa descopar niste retete mai mult decat interesante din bucataria ruseasca, pe care abia astept sa le testez. M-am apucat imediat sa caut inspiratie pe Pinterest, dar stiam ca imi va fi dificil sa gasesc o reteta ruseasca pe care sa o pot prepara, avand in vedere ca momentan sunt la Milano, nu am cuptor si nici colectia mea de food props nu e prea dezvoltata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta traditionala de syrniki este facuta cu o branza numita tvorog, care, din cate mi-am dat seama, e similara cu branza proaspata de vaci. Eu am folosit ricotta, deoarece a fost varianta cea mai apropiata ca textura si gust pe care am putut sa o gasesc aici. Am optat pentru varianta dulce, cu topping de dulceata de fructe de padure si capsuni proaspete. Ma bucur mult ca am descoperit si alte retete rusesti pe care cu siguranta le voi testa cat mai curand, precum Kartofelnye Zrazy (un fel de pachetele din cartofi umplute cu ciuperci), Piroshki (placintele umplute cu carne, dar pe care le pot face cu usurinta in varianta vegetariana), sau Pierogi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>un mic dejun sau un branch consistent, gata in mai putin de 20 de minute, fara cuptor<\/li>\n<li>o reteta usoara pe care o poti prepara intr-o bucatarie improvizata, cu o singura tigaie<\/li>\n<li>o modalitate de a folosi branza de vaci sau ricotta care iti sta in frigider<\/li>\n<li>un desert cald, pufos, pe care il poti face dulce sau sarat, in functie de pofta<\/li>\n<li>o reteta vegetariana care place si copiilor, servita cu gem, smantana sau fructe<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sunt extrem de usor de facut.<\/strong> Ai nevoie de doar cinci ingrediente de baza si de o tigaie. Aluatul se face dintr-un singur bol, fara mixer si fara cuptor.<\/li>\n<li><strong>Sunt gata rapid.<\/strong> De la branza pasata pana la prima clatita aurie pe farfurie trec doar cateva minute, asa ca sunt perfecte pentru o dimineata grabita.<\/li>\n<li><strong>Sunt versatile.<\/strong> Le poti face dulci sau sarate. Tvorog este branza traditionala ruseasca cu care se fac syrniki, iar din cate mi-am dat seama e foarte asemanatoare cu branza proaspata de vaci. Daca nu o gasesti, ricotta este cea mai buna alternativa, exact ca la mine. Cauta o branza cat mai uscata si mai putin apoasa, pentru ca surplusul de lichid e principalul motiv pentru care aluatul iese moale si clatitele se desfac in tigaie. Daca branza ta pare apoasa, las-o sa se scurga intr-o sita cateva minute inainte de a o folosi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> tine aluatul legat. Folosesti cinci linguri in compozitie, plus inca doua-trei pe o farfurie, in care tavalesti fiecare clatita inainte de prajit. Stratul subtire de faina de pe exterior e cel care da crusta aurie si ajuta clatitele sa nu se lipeasca. Nu exagera cu faina in aluat, altfel syrniki ies tari, nu pufoase; daca branza e bine scursa, cinci linguri sunt suficiente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oul<\/strong> leaga aluatul si ii da elasticitate, astfel incat clatitele sa isi pastreze forma in tigaie. Un singur ou este de ajuns pentru cantitatea de branza din reteta; daca pui mai mult, compozitia devine prea lichida si va avea nevoie de faina suplimentara, ceea ce le ingreuneaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul<\/strong> indulceste aluatul. Trei linguri dau o dulceata blanda, potrivita pentru varianta dulce. Daca vrei sa le faci sarate, poti reduce zaharul la o lingura sau il poti scoate complet si sa adaugi un praf de sare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul pentru prajit<\/strong> trebuie sa fie bine incins inainte sa pui prima clatita, dar nu fumegand. Folosesti aproximativ o lingura intr-o tigaie non-aderenta. Daca uleiul nu e suficient de fierbinte, clatitele absorb grasime si raman palide; daca e prea fierbinte, se ard la exterior inainte sa se faca in mijloc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Toppingurile<\/strong> sunt partea de joaca: smantana, gem, miere sau fructe proaspete. Eu am mers pe dulceata de fructe de padure si capsuni proaspete, combinatie care echilibreaza perfect branza cremoasa de dedesubt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Paseaza bine branza inainte de orice.<\/strong> Cu o furculita sau cu robotul de bucatarie, lucreaza branza pana devine cremoasa. Daca raman cocoloase, ele se vor simti in textura finala, iar clatitele nu vor iesi uniforme.<\/li>\n<li><strong>Tavaleste fiecare clatita in faina pe farfurie.<\/strong> Iei o lingura de aluat, o pui in farfuria cu faina, presari faina pe deasupra si modelezi cu mainile o bila. Stratul de faina e cel care iti permite sa lucrezi un aluat lipicios fara sa ti se lipeasca de degete.<\/li>\n<li><strong>Pastreaza grosimea de aproximativ 7 mm.<\/strong> Aplatizeaza bila si da-i forma de clatita groasa. Daca le faci prea subtiri, se usuca; daca sunt prea groase, raman crude in mijloc cand exteriorul e deja rumenit.<\/li>\n<li><strong>Stii ca sunt gata cand sunt aurii pe ambele parti.<\/strong> Prajeste-le pe foc mediu si intoarce-le o singura data, cand prima parte e bine rumenita. Important e ca branza sa fie cat mai uscata, nu apoasa.<\/li>\n<li><strong>Varianta sarata:<\/strong> reduce sau scoate zaharul, adauga un praf de sare si poate putin marar tocat, apoi serveste cu smantana. Reteta merge la fel de bine si dulce, si sarata.<\/li>\n<li><strong>Toppinguri:<\/strong> in loc de dulceata de fructe de padure si capsuni, poti folosi miere, gem de caise, smantana sau orice fructe proaspete ai la indemana.<\/li>\n<li><strong>Indulcitor:<\/strong> daca preferi, poti inlocui zaharul cu un alt indulcitor la alegere, ajustand cantitatea dupa gust.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Syrniki sunt cele mai bune calde, imediat dupa prajit, cand crusta e inca usor crocanta. Daca iti raman, pune-le intr-un recipient inchis si pastreaza-le la frigider doua-trei zile. Le incalzesti cel mai bine intr-o tigaie, cateva secunde pe fiecare parte, ca sa isi recapete textura; la microunde devin moi. Poti pasa branza si pregati aluatul de cu seara, sa il tii acoperit la frigider, apoi sa modelezi si sa prajesti clatitele dimineata, ca sa ai un mic dejun cald in cateva minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac clatitele in toate formele lor, mai incearca si aceste <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-pufoase-vegane-fara-gluten\/\">clatite pufoase vegane fara gluten<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-cu-unt-de-arahide\/\">clatite cu unt de arahide<\/a>. Iar daca vrei sa ramai in zona retetelor cu branza, arunca un ochi peste <a href=\"https:\/\/gourmandelle.com\/ro\/budinca-de-dovlecei-cu-branza\/\">budinca de dovlecei cu branza<\/a>.<\/p>\n\n\n<div
