Sincera sa fiu, nu eram mare fana a cuscusului, dar o salata pe care am mancat-o intr-un local m-a facut sa imi schimb parerea complet. De atunci, cuscusul a devenit un ingredient care nu lipseste niciodata din camara mea &#8212; pot sa spun ca imi place chiar mai mult decat orezul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Asa ca, intr-o zi, mi-am adus aminte de salata aceea delicioasa si am decis sa prepar chiar eu una asemanatoare. Eu prefer sa o servesc rece, asa ca imediat dupa ce o prepar o bag la frigider sa se raceasca bine. Raportul cheie este 1 parte cuscus la 2 parti apa (aici 200 g la 400 ml), iar daca pui prea multa apa ramane lipicios. Cauta cuscus cu bobul uniform si uscat; cel mediu sau fin se face cel mai repede si e ideal pentru salate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei gras rosu<\/strong> &#8212; alege-l ferm, lucios si greu in mana, semn ca e proaspat si carnos. Cel rosu e mai dulce decat cel verde fiindca e copt mai mult, asa ca aduce un plus de dulceata naturala salatei. Il tai cubulete mici ca sa se distribuie uniform printre boabele de cuscus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcov<\/strong> &#8212; il calesti la inceput impreuna cu celelalte legume tari, ca sa se inmoaie putin si sa-si elibereze dulceata. Daca il vrei mai crocant in salata, da-l pe razatoarea mare in loc sa-l tai cubulete. Cauta morcovi tari, fara pete moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vanata<\/strong> &#8212; adauga o textura catifelata si absoarbe minunat uleiul si aromele. Taie-o cubulete mici si caleste-o suficient cat sa se inmoaie, altfel ramane amaruie si spongioasa. O vanata mica si tanara are mai putine seminte si e mai putin amara decat una mare si batrana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Castravete si rosie<\/strong> &#8212; acestea doua se adauga la final, dupa ce ai oprit focul, ca sa ramana proaspete si crocante si sa nu lase prea multa apa in salata. Rosia bine coapta si parfumata face toata diferenta; daca lasa multa zeama, scoate-i miezul cu semintele inainte sa o toci.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Masline feliate<\/strong> &#8212; aduc nota sarata si usor amaruie care echilibreaza dulceata legumelor calite. Le adaugi tot la final, ca sa nu se faca terci. Maslinele Kalamata sau cele negre la borcan, scurse bine, merg cel mai bine aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel proaspat, ulei de masline si boia dulce afumata<\/strong> &#8212; patrunjelul tocat se pune la final pentru prospetime, uleiul de masline leaga totul, iar boiaua afumata (optionala, dar eu o recomand) da o aroma calda, de fum, care ridica salata. Foloseste un ulei de masline extravirgin de calitate, fiindca aici simti gustul lui direct.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Respecta raportul de apa.<\/strong> 200 g cuscus la 400 ml apa este exact cat trebuie. Acopera tigaia si lasa cuscusul sa absoarba tot lichidul &#8212; stii ca e gata cand apa a disparut complet si boabele sunt pufoase, nu ude.<\/li>\n<li><strong>Afaneaza cuscusul cu furculita.<\/strong> Dupa ce a absorbit apa, plimba o furculita prin el ca sa separi boabele. Asa eviti sa ramana cocolos si salata are textura aerata.<\/li>\n<li><strong>Adauga in doua etape.<\/strong> Legumele tari (ardei, morcov, vanata, ceapa) se calesc la inceput, iar cele crude si delicate (castravete, rosie, masline, patrunjel) intra dupa ce ai oprit focul. Reteta e iertatoare si suporta orice legume de sezon ai prin frigider.<\/li>\n<li><strong>Adauga proteina.<\/strong> Un pumn de naut fiert sau cateva cubulete de tofu transforma salata intr-un fel principal complet si mai satios.<\/li>\n<li><strong>Joaca-te cu condimentele.<\/strong> Pe langa boiaua afumata, o lingurita de chimion sau putin coriandru macinat duc salata spre o nota orientala.<\/li>\n<li><strong>Variaza ierburile.<\/strong> Daca nu ai patrunjel, menta proaspata sau busuiocul merg minunat cu cuscusul si dau un aer de vara.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Salata de cuscus se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient inchis. De fapt, e una dintre acele salate care e si mai buna a doua zi, dupa ce aromele au avut timp sa se aseze. Eu o prefer rece, asa ca o pregatesc adesea cu o zi inainte si o iau la pachet la pranz. Daca o servesti calda, o poti incalzi usor, dar tine minte ca atunci castravetele si rosia se inmoaie &#8212; pentru varianta calda le poti adauga proaspete in farfurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac salatele racoroase de vara, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-vara\/\">salata de vara<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/salata-cu-quinoa\/\">salata cu quinoa<\/a>, la fel de satioasa datorita cerealelor.
