Se prepara in cateva minute si merge perfect ca garnitura sau ca fel principal usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desi afara era inca frig, in ziua in care am pus-o pe masa aveam pofta de ceva lejer si plin de aroma, ceva care sa-mi aduca aminte de zilele cu soare. Toata saptamana mancasem reconfortant, chiftelute si tocane, asa ca am simtit nevoia de o pauza verde. Mi-am amintit de cateva nuci pe care le aveam in camara, le-am prajit putin intr-o tigaie fara ulei cat sa se rumeneasca, apoi le-am zdrobit si le-am presarat peste frunze pentru un plus de textura. Apoi mi-am dat seama ca am pofta si de rosii uscate, asa ca au intrat si ele in castron.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desi am facut foaaarte multe salate pana acum, mai ales vara cand gradina aproape ca-mi explodeaza de frunze verzi delicioase, cea de azi a ajuns imediat in topul preferintelor mele si sunt sigura ca o voi prepara din nou foarte curand. Iar dressingul a fost unul dintre cele mai bune dressinguri de salata pe care le-am facut vreodata. In caz ca te hotarasti sa o incerci, sunt foarte curioasa ce parere ai despre dressingul de citrice.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" langa un fel principal mai consistent, gata in sub 10 minute.<\/li>\n<li>Un pranz lejer in zilele in care vrei ceva verde si plin de aroma, fara sa stai mult la bucatarie.<\/li>\n<li>O doza buna de vitamine din frunze verzi si citrice, exact cand ai nevoie sa te gandesti la zilele cu soare.<\/li>\n<li>O salata care arata si gusteste a &#8220;restaurant&#8221;, dar pe care o faci cu ingrediente simple din camara si frigider.<\/li>\n<li>Un fel principal usor, daca ii adaugi o sursa de proteina precum naut prajit, branza sau tofu.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Dressingul de citrice este vedeta.<\/strong> Combinatia de zeama de portocala si lamaie cu mustar de Dijon si miere echilibreaza acrisorul cu dulcele si da o salata aromata, nu plata.<\/li>\n<li><strong>Contrastul de texturi.<\/strong> Frunzele crocante, nucile rumenite, rosiile uscate moi si bucatile suculente de portocala fac fiecare imbucatura interesanta.<\/li>\n<li><strong>Se face in cateva minute.<\/strong> Nu necesita gatit, doar spalat, taiat si amestecat, asa ca e perfecta pentru zilele aglomerate.<\/li>\n<li><strong>Zero risipa.<\/strong> Foloseste uleiul aromat de la rosiile uscate direct in dressing, asa ca nimic nu se pierde.<\/li>\n<li><strong>Plina de vitamine.<\/strong> Frunzele verzi si citricele aduc vitamina C si prospetime, exact ce-ti trebuie cand vrei ceva usor.<\/li>\n<li><strong>Usor de adaptat.<\/strong> Functioneaza ca garnitura, dar devine fel principal cu 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mix de rucola si mizuna<\/strong> &#8212; baza salatei. Rucola aduce o nota usor piperata, iar mizuna o frunza fina, blanda. La cumparare, cauta frunze ferme, de culoare intensa, fara margini ingalbenite sau umede. Daca nu gasesti mizuna, poti adauga baby spanac in combinatie. Spala frunzele si usuca-le bine (intr-o centrifuga de salata sau pe un prosop curat) &#8212; frunzele ude dilueaza dressingul si nu-l mai lasa sa se prinda de salata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nuci<\/strong> &#8212; adauga textura crocanta si o nota de unt. Secretul este sa le rumenesti putin intr-o tigaie uscata, fara ulei, pe foc mediu, cat sa devina aromate. Nu le lasa nesupravegheate: stii ca sunt gata cand incep sa miroasa a prajit si capata o nuanta aurie, dar inainte sa se inchida la culoare, pentru ca trec foarte repede de la rumenite la arse si amare. Zdrobeste-le grosier dupa ce s-au racit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii uscate in ulei<\/strong> &#8212; aduc un gust intens, dulce-acrisor si sarat, plus uleiul aromat pe care il refolosesti in dressing. Alege rosii moi, nu uscate si tari, scufundate complet in ulei. Taie-le in bucatele mici ca sa se distribuie uniform si pastreaza uleiul &#8212; el este unul dintre cele 3 linguri de ulei din dressing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Portocala<\/strong> &#8212; intra de doua ori: o portocala decojita si taiata cubulete in salata, plus zeama de la o portocala in dressing. Alege portocale grele pentru marimea lor, semn ca sunt suculente. Cand o decojesti, incearca sa scoti si pielita alba si membranele, ca sa ramana doar pulpa dulce, fara amareala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mustar de Dijon si miere<\/strong> &#8212; duo-ul care leaga dressingul. Mustarul de Dijon nu aduce doar gust, ci ajuta si la emulsionare, adica face ca uleiul si zeama de citrice sa nu se separe. Mierea echilibreaza aciditatea citricelor cu o dulceata fina. (Aceasta combinatie face reteta vegetariana, nu vegana &#8212; vezi sectiunea de substitutii.)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zeama de lamaie, sare si piper alb<\/strong> &#8212; zeama de la jumatate de lamaie adauga prospetime peste portocala, iar piperul alb da o nota subtila, picanta, fara punctele negre vizibile in dressingul deschis la culoare. Apa de pe ele dilueaza dressingul si acesta aluneca in loc sa imbrace salata. Foloseste o centrifuga de salata sau tamponeaza-le cu un prosop curat.<\/li>\n<li><strong>Rumeneste nucile, dar stai langa tigaie.<\/strong> Trec de la aromate la arse in cateva secunde. Stii ca sunt gata cand miros a prajit si sunt usor aurii &#8212; scoate-le imediat din tigaia fierbinte, altfel continua sa se gateasca.<\/li>\n<li><strong>Emulsioneaza dressingul ca lumea.<\/strong> Amesteca energic mustarul, mierea, zeama de citrice, sarea si piperul, apoi adauga uleiul treptat, batand continuu. Asa obtii un dressing cremos si omogen, nu unul separat in ulei si zeama.<\/li>\n<li><strong>Asezoneaza la final.<\/strong> Toarna dressingul peste salata si amesteca chiar inainte de servire. Daca o lasi imbracata prea mult, frunzele delicate se inmoaie si isi pierd din crocant.<\/li>\n<li><strong>Gusteaza si echilibreaza.<\/strong> Daca dressingul ti se pare prea acrisor, mai adauga putina miere; daca e prea dulce, cateva picaturi de lamaie il readuc in echilibru.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Versiunea vegana.<\/strong> Inlocuieste mierea cu sirop de artar sau de agave. Obtii aceeasi dulceata fina care echilibreaza citricele, fara ingrediente de origine animala.<\/li>\n<li><strong>Alte frunze verzi.<\/strong> Daca nu gasesti mizuna, adauga baby spanac in combinatie cu rucola, sau foloseste un mix de salate de sezon. Frunzele cu caracter (rucola, valeriana) merg cel mai bine cu dressingul de citrice.<\/li>\n<li><strong>Alte nuci si seminte.<\/strong> Inlocuieste nucile cu migdale, fistic sau seminte de floarea-soarelui rumenite, daca preferi sau ai alergii.
