Sotezi conopida congelata cu ceapa, usturoi si morcov, adaugi spanacul, legi totul cu oua, branza de capra si pasta miso, apoi coci la 200C pana se rumeneste crusta de parmezan. Perfecta pentru pranz sau cina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta asta s-a nascut, ca multe dintre preferatele mele, dintr-o pofta de ceva reconfortant, dar usor in acelasi timp. Aveam niste resturi prin frigider pe care nu voiam sa le arunc (stiti deja cat de mult urasc sa arunc mancarea!), asa ca am inceput sa ma gandesc la feluri in care le-as putea folosi. O idee super buna mi-a venit curand in minte: cum ar fi sa fac niste legume gratinate?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pana la urma, legumele gratinate se numara printre cele mai usoare tipuri de mancare din lume si sunt si super versatile &#8212; poti pune orice vrei intr-o tava de cuptor, apoi trebuie doar sa presari branza sau parmezan peste (cum am facut si eu) si sa bagi totul la cuptor pana ce devine auriu si delicios. exact ce transforma o gratinata din ceva banal in ceva la care revii.<\/li>\n<li><strong>Folosesti conopida congelata.<\/strong> Nu trebuie sa speli, sa tai si sa desfaci buchetele &#8212; merge direct in tigaie, asa ca o poti face oricand, fara planificare.<\/li>\n<li><strong>Pasta miso aduce umami in plus.<\/strong> Doua linguri dau o adancime savuroasa pe care branza singura nu o poate da, fara sa fie nevoie de bulion sau alte adaosuri.<\/li>\n<li><strong>Bogata in proteine si saracioasa.<\/strong> Ouale, branza de capra si parmezanul o fac suficient de consistenta cat sa fie masa principala, nu doar o garnitura.<\/li>\n<li><strong>Se face dintr-o singura tigaie plus o tava.<\/strong> Sotezi totul in aceeasi tigaie, apoi muti in tava de cuptor &#8212; congelata e alegerea mea aici fiindca e deja portionata si gata de gatit. Important: nu o dezgheta inainte. O adaugi direct in tigaie peste ceapa calita si o lasi acoperita, ca aburul sa o frageze. Daca folosesti conopida proaspata, taie buchetele de marime egala ca sa se gateasca uniform si adauga cateva minute in plus la sotat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanac proaspat (500 g, tocat grosolan)<\/strong> &#8212; pare enorm, dar se lasa drastic la caldura, asa ca nu te speria de cantitate. Cauta frunze de un verde viu, ferme, fara pete galbene sau zone alunecoase. Daca ai doar spanac congelat, stoarce-l bine de apa inainte de a-l adauga, altfel amestecul iese prea apos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza de capra rasa (200 g)<\/strong> &#8212; da o aroma usor acrisoara si o cremozitate care leaga legumele. Daca ti se pare prea intensa, alege una mai tanara, cu gust mai bland. Se topeste mai usor daca o lasi cateva minute la temperatura camerei inainte de a o amesteca in compozitia luata de pe foc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta miso (2 linguri)<\/strong> &#8212; ingredientul-surpriza care aduce umami. Miso alb (shiro) e cel mai bland si potrivit aici; cel mai inchis la culoare e mai sarat si mai puternic. Tine minte ca miso e deja sarat, asa ca pune sare la final, dupa ce gusti, nu inainte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmet Panko (100 g)<\/strong> &#8212; Panko are fulgi mai mari si mai aerati decat pesmetul obisnuit, deci ramane crocant mai mult timp. Aici se amesteca in compozitie ca sa absoarba excesul de umiditate si sa dea structura, nu doar deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua (3, batute)<\/strong> &#8212; ele leaga totul, asa ca preparatul tine forma cand il portionezi. Adauga-le doar dupa ce ai luat tigaia de pe foc si compozitia s-a mai racit putin, altfel ouale se branzesc in loc sa lege uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Parmezan ras fin (4 linguri)<\/strong> &#8212; merge presarat deasupra, ca sa formeze crusta aurie. Ras fin se topeste si se rumeneste mai uniform decat fulgii grosi. Pentru o varianta strict vegetariana, alege un parmezan fara cheag animal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghee, ceapa, usturoi si morcov<\/strong> &#8212; ghee-ul suporta caldura mare fara sa arda si da o aroma usor de nuca. Ceapa si usturoiul sunt baza aromatica, iar morcovul taiat marunt aduce un strop de dulceata si culoare.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa apa sa se evapore.<\/strong> Conopida congelata si spanacul lasa multa apa. Inainte de a opri focul, daca vezi lichid pe fundul tigaii, lasa-l sa scada cateva minute fara capac &#8212; altfel gratinata iese apoasa, nu cremoasa.<\/li>\n<li><strong>Temperatura conteaza pentru oua.<\/strong> Greseala clasica e sa adaugi ouale in compozitia inca fierbinte. Ia tigaia de pe foc, asteapta sa se mai linisteasca aburul, apoi incorporeaza-le &#8212; asa legi totul fara sa obtii bucatele de omleta.<\/li>\n<li><strong>Stii ca e gata cand crusta e aurie.<\/strong> Dupa cele 25 de minute la 200C, parmezanul de deasupra trebuie sa fie rumen si usor crocant, iar marginile sa sfaraie usor. Daca arata inca palid, mai lasa 3-5 minute.<\/li>\n<li><strong>Rabda inainte sa portionezi.<\/strong> Lasa tava sa se raceasca putin inainte de servire. Compozitia se aseaza pe masura ce se odihneste, asa ca o tai mult mai frumos decat daca o ataci direct din cuptor.<\/li>\n<li><strong>Gusta inainte de a sara.<\/strong> Intre miso, branza de capra si parmezan, ai deja multa sare in vas. Eu nu am avut la momentul respectiv, din pacate, dar pe voi va sfatuiesc sa adaugati.<\/li>\n<li><strong>Schimba branza.<\/strong> Daca nu iti place branza de capra, mergi pe feta sfaramata, mozzarella rasa sau un cheddar matur. Fiecare schimba caracterul, dar toate leaga la fel de bine.<\/li>\n<li><strong>Mai multe legume.<\/strong> Fiind o reteta de tip &#8220;goleste frigiderul&#8221;, poti adauga broccoli, dovlecel sau ardei taiat marunt &#8212; exact spiritul in care s-a nascut, ca sa nu arunci nimic.<\/li>\n<li><strong>Fara ghee.<\/strong> Inlocuieste ghee-ul cu unt simplu sau cu ulei de masline daca preferi o varianta de post in privinta grasimii (atentie, restul retetei ramane vegetarian).<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Gratinata se pastreaza foarte bine 3-4 zile la frigider, intr-un recipient inchis. Se incalzeste cel mai bine la cuptor sau in air fryer, ca sa-si recapete crusta crocanta &#8212; la microunde iese buna, dar mai moale. O poti pregati si in avans: asambleaza compozitia in tava, tine-o acoperita la frigider peste noapte si coace-o a doua zi, adaugand cateva minute in plus la timpul de coacere fiindca pleaca de la rece.
