Le servesc alaturi de piure de cartofi, iar gustul e foarte apropiat de cel al chiftelutelor cu carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta a ajuns direct in topul favoritelor mele si, da, nu sunt deloc modesta cand vine vorba de retete reusite. Chiftelutele au iesit excelent, cu un gust apropiat de cel al chiftelutelor cu carne, iar pana si textura e potrivita, multumita texturatului de soia granule. Le-am descoperit intr-un moment in care cautam mancare de suflet fara compromisuri, si exact asta mi-au oferit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trebuie sa marturisesc ceva: recent am renuntat complet la lactate, dupa ce am descoperit ca imi provoaca alergie. Asadar, adio unt in piureul de cartofi. Nici macar nu puteam sa concep piureul fara unt, insa mi-a venit ideea de a adauga putina maioneza vegana, iar rezultatul a fost peste asteptari. Tot in aceeasi perioada mi-am re-pornit canalul de YouTube, asa ca retetele de acest gen au inceput sa apara mai des in bucataria mea.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>O reteta de post completa, cu chiftelute, sos si garnitura, care nu te lasa cu senzatia ca lipseste ceva.<\/li>\n<li>O alternativa fara carne care sa multumeasca si pe cei care nu sunt vegetarieni, datorita texturii si gustului apropiate de chiftelutele clasice.<\/li>\n<li>Un fel principal complet fara lactate, ideal daca ai, ca mine, o intoleranta sau o alergie la produsele lactate.<\/li>\n<li>O masa de duminica sau de sarbatoare care arata si se simte ca o mancare gatita cu rabdare, dar pe care o poti pregati din timp.<\/li>\n<li>O reteta pe care o poti dubla sau tripla si congela, ca sa ai la indemana o masa rapida intr-o zi aglomerata.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Textura convingatoare.<\/strong> Texturatul de soia granule, dupa ce se hidrateaza si se prajeste, capata o muscatura ferma si o suprafata crocanta, foarte apropiata de chiftelutele cu carne.<\/li>\n<li><strong>Sos alb cremos fara lactate.<\/strong> Caju inmuiat si mixat fin da un sos catifelat, iar fulgii de drojdie inactiva ii aduc o nota savuroasa, fara sa folosesti un strop de smantana sau lapte.<\/li>\n<li><strong>Complet de post si vegana.<\/strong> Nu contine carne, oua sau lactate, deci se incadreaza perfect in zilele de post sau intr-un regim vegan.<\/li>\n<li><strong>Piure cremos cu un truc surpriza.<\/strong> Maioneza vegana inlocuieste untul si da piureului o textura matasoasa, fara sa simti lipsa lactatelor.<\/li>\n<li><strong>Se preteaza la gatit in avans.<\/strong> Poti modela si prepara chiftelutele dinainte, le congelezi, iar data viitoare iti injumatatesti timpul petrecut la aragaz.<\/li>\n<li><strong>O masa completa intr-o farfurie.<\/strong> Chiftelute, sos si garnitura se leaga intr-un fel 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Soia granule<\/strong> este baza chiftelutelor si cea care le da textura. La cumparare, alege granule, nu cuburi sau felii, pentru ca acestea se hidrateaza uniform si se modeleaza mai usor. Secretul este sa torni apa fierbinte peste ele si sa le lasi sa se inmoaie aproximativ 10 minute, apoi sa le scurgi foarte bine. Daca raman prea ude, compozitia nu se va lega si chiftelutele se vor desface in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut si taratele de psyllium<\/strong> sunt liantii care tin chiftelutele intregi, in lipsa oului. Faina de naut adauga si proteina, iar psyllium absoarbe umezeala si formeaza un gel care leaga compozitia. Daca mixul iti pare prea uscat, mai adauga 1-2 linguri de apa: trebuie sa poti modela usor chiftelutele, fara ca aluatul sa se sfarame intre degete.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele de chiftelute<\/strong> (cu chimion, piper, coriandru macinat, ceapa si usturoi) plus Belsugul de Mirodenii Dulce dau gustul caracteristic, apropiat de cel al chiftelutelor traditionale. Lingurita de cacao pudra poate parea o ciudatenie, dar adauga profunzime si o culoare mai apropiata de cea a chiftelutelor cu carne. Nu o sari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud<\/strong> este inima sosului alb. Trebuie pus la inmuiat peste noapte sau cel putin 2 ore, ca sa se inmoaie suficient si sa se mixeze fin, fara granule. Alege caju crud, nu prajit sau sarat, pentru ca aroma lui neutra si dulceaga este exact ce vrei intr-un sos. Cu cat il inmoi mai mult, cu atat sosul iese mai catifelat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> dau sosului acea nota savuroasa, usor branzoasa, fara niciun lactat. Nu ii confunda cu drojdia pentru paine: drojdia inactiva nu dospeste, ci este folosita strict pentru gust. Cauta-i la raionul de produse vegane sau bio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> intra in sos in cantitate generoasa, 6-8 catei, si este cel care ii da caracter. Daca preferi un gust mai bland, poti reduce cantitatea, dar in sosul alb cremos usturoiul nu domina, ci se rotunjeste frumos la incalzire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofii si maioneza vegana<\/strong> formeaza piureul. Pentru un piure cremos, alege cartofi fainosi si pastreaza un pahar din apa de fierbere ca sa reglezi textura. Maioneza vegana este ingredientul surpriza care inlocuieste untul si da piureului matasozitatea de care ai nevoie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Scurge bine soia.<\/strong> Cea mai frecventa greseala este sa lasi granulele prea ude. Stoarce-le bine cu mana inainte sa adaugi restul ingredientelor, altfel chiftelutele nu se vor lega si se vor desface la prajit.<\/li>\n<li><strong>Nu sari prajirea.<\/strong> Sosul cremos vine mai tarziu, dar crusta crocanta se obtine doar prin prajire. Pune ulei cat sa acopere fundul tigaii, nu trebuie baie de ulei, si prajeste chiftelutele pe toate partile pana devin aurii si crocante.<\/li>\n<li><strong>Amesteca sosul incontinuu.<\/strong> Cand torni sosul in tigaie si il incalzesti pe foc mic spre mediu, amesteca fara pauza ca sa nu se prinda. Opreste focul cand capata consistenta de iaurt; se va mai inchega pe masura ce se raceste.<\/li>\n<li><strong>Verifica textura compozitiei.<\/strong> Inainte sa modelezi, ia putin mix in mana: daca se sfarama, mai adauga apa lingura cu lingura; daca e prea moale, lasa-l cateva minute sa absoarba psyllium-ul.<\/li>\n<li><strong>Tampoaneaza chiftelutele.<\/strong> Dupa prajit, aseaza-le pe o farfurie acoperita cu prosop de hartie, ca sa absoarba surplusul de grasime si sa ramana crocante, nu uleioase.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>In loc de caju<\/strong> poti folosi alte seminte sau nuci neutre, inmuiate la fel, daca ai o intoleranta. Important e sa fie inmuiate suficient ca sa se mixeze fin.<\/li>\n<li><strong>Condimentele<\/strong> se pot ajusta dupa gust. Daca nu gasesti amestecul de condimente de chiftelute, combina chimion, piper, coriandru macinat, ceapa si usturoi pudra in proportii apropiate.<\/li>\n<li><strong>Pentru un gust mai bland<\/strong> al sosului, reduce usturoiul de la 6-8 catei la 3-4. Pentru unul mai intens, lasa cantitatea intreaga.<\/li>\n<li><strong>Garnitura<\/strong> nu trebuie sa fie obligatoriu piure. Poti dubla sau chiar tripla cantitatea, le modelezi si le prajesti, apoi le congelezi pentru o alta zi. Astfel, data viitoare cand vrei sa pregatesti reteta, iti reduci timpul de gatit la jumatate. Sosul alb se pastreaza la frigider, intr-un recipient inchis, cateva zile; se va ingrosa la rece, asa ca poti subtia cu putina apa la reincalzire, amestecand pe foc mic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pastreaza chiftelutele si sosul separat de piure pentru un rezultat mai bun la reincalzire.
