In cazul unei retete cu maia, se face un preferment, acesta fiind un pas important in orice reteta de aluat cu maia.<\/p><p>Pe scurt, prepararea unui preferment este primul pas in coacerea unei paini cu maia \u2013 este atunci cand luati putina maia maturata din borcan si o amestecati cu apa si faina pentru a fermenta. Este, de asemenea, ceea ce confera painii acel gust \u201eacidulat\u201d specific!<\/p><h2 class=\"ch2 wp-block-heading\" id=\"15\">Cand ar trebui sa dospesti aluatul si sa pregatesti prefermentul de maia?<\/h2><p>Vei dospi aluatul ca prim pas atunci cand faci o reteta de paine cu maia sau orice alta reteta care implica maia. In acest caz, agentul de crestere va fi chiar maiaua naturala combinata cu apa si faina \u2013 este exact ca si cum ai hrani starterul de maia! Numele provine de la faptul ca amestecul de faina si apa este lasat sa fermenteze mai mult timp \u2013 acest lucru este ideal daca doriti sa coaceti painea mai tarziu.<\/p><p>Aceasta metoda se realizeaza prin refrigerarea aluatului in timpul cresterii initiale (imediat dupa ce framanti aluatul) sau in timpul cresterii finale (dupa ce ai modelat deja painea in tava). Dupa ce amesteci maiaua cu apa si faina si o lasi la fermentat, vei obtine un aluat dospit \/ preferment de maia. Acest amestec este cel mai bine folosit imediat dupa fermentare &#8211; atunci vei obtine cel mai ridicat nivel de nutrienti si cea mai buna textura si aroma pentru painea ta.<\/p><h2 class=\"ch2 wp-block-heading\" id=\"19\">Cum testezi aluatul dospit \/ prefermentul de maia<\/h2><p>Poti testa aluatul folosind asa-zisul <strong>\u201etest de plutire\u201d.<\/strong><\/p><p>Iata cum se procedeaza: umple un vas cu apa (la temperatura camerei!), apoi rupe o cantitate mica de aluat dospit (este suficienta o lingurita) si pune-o in apa. Daca pluteste, inseamna ca are suficiente bule de aer si este gata de folosire. Daca se scufunda, trebuie sa-l lasi sa mai fermenteze putin sau sa astepti urmatoarea hranire.<\/p><p>Asadar, in acest articol am oferit toate informatiile necesare despre maia si beneficiile consumului de produse din maia. Asa ca acum trebuie sa incepeti sa va preparati propria maia acasa!
