Au un gust si o textura foarte apropiate de varianta clasica cu carne, dar sunt complet fara produse de origine animala si gata in mai putin de 30 de minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Texturatul de soia este inlocuitorul meu preferat al carnii cand vreau ceva consistent. L-am folosit prima data in reteta mea de <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-in-sos\/\"><strong>chiftelute in sos alb<\/strong><\/a>, iar dupa ce mi-a iesit acolo am vrut neaparat sa il testez si intr-un sos ragu. A iesit perfect din prima. Pentru mine este de departe cel mai bun sos vegan pentru paste Bolognese si nu se compara, ca textura si gust, cu variantele pe baza de linte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta este si fara gluten, pentru ca am folosit spaghete fara gluten de la brandul meu preferat de GF, Schar. Daca nu ai mai folosit pana acum, iti recomand sa cumperi numai produse nemodificate genetic si fara sare sau MSG adaugat, ca sa controlezi tu condimentarea. Granulele se hidrateaza direct in tigaie cand torni apa sau stockul, deci nu trebuie inmuiate separat. Cauta granule fine, nu bucati mari, pentru ca seamana mai bine cu carnea tocata in sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate<\/strong> &#8212; cele 5 linguri sunt baza de gust si culoare a sosului. Aici merita sa nu te zgarcesti la calitate: o pasta concentrata, densa, cu rosii coapte, da mult mai multa profunzime decat una apoasa. Calita scurt in ulei la inceput, isi pierde aciditatea cruda si capata un gust mai dulce, rotund.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vinul rosu<\/strong> &#8212; cele 100 ml de vin rosu fac diferenta dintre un sos bun si unul cu adevarat bogat. Alcoolul se evapora la fierbere si ramane doar aroma adanca, usor fructata. Foloseste un vin sec pe care l-ai bea si la masa, nu vin de gatit ieftin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoiul<\/strong> &#8212; o ceapa tocata marunt si 4 catei de usturoi pisati formeaza baza aromatica. Caleste ceapa pana devine translucida si moale inainte sa adaugi restul, ca sa nu ramana cruda si iute in sos. Usturoiul il pui dupa ceapa, ca sa nu se arda si sa devina amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Belsug de Mirodenii Dulce si oregano<\/strong> &#8212; cele 2 linguri de Belsug de Mirodenii Dulce plus lingurita de oregano uscat dau profilul mediteranean al sosului. Oregano uscat este mai concentrat decat cel proaspat, asa ca o lingurita este suficienta. Adauga condimentele odata cu lichidul, ca sa aiba timp sa se infuzeze in cele 15 minute de fierbere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spaghete<\/strong> &#8212; 250 g de spaghete sunt suficiente pentru sosul de mai sus. Eu am folosit spaghete fara gluten de la Schar, brandul meu preferat de GF. Fierbe-le al dente, pentru ca se mai inmoaie putin cand le amesteci cu sosul cald.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste pasta de tomate, nu o turna direct.<\/strong> Lasa pasta de tomate cateva zeci de secunde in uleiul incins, pana isi schimba culoarea spre caramiziu si miroase dulce. Acesta este cel mai des intalnit pas sarit, iar fara el sosul ramane acru si plat.<\/li>\n<li><strong>Lasa lichidul sa se absoarba complet.<\/strong> Stii ca sosul e gata cand, dupa cele 15 minute la foc mic, nu mai ramane lichid liber pe fundul tigaii si textura este densa, lipicioasa. Daca e inca apos, mai lasa-l cateva minute.<\/li>\n<li><strong>Nu sari peste calirea cepei.<\/strong> Greseala clasica este sa grabesti acest pas. Ceapa cruda ramane iute si crocanta in sos. Tine-l in frigider intr-un recipient inchis pana la 3-4 zile, iar gustul chiar se intensifica a doua zi, dupa ce condimentele au avut timp sa se aseze. Se congeleaza si el bine pana la 2-3 luni, asa ca poti dubla cantitatea si pune o parte la congelator. Reincalzeste-l la foc mic, cu putina apa daca s-a ingrosat prea tare.
