Odata ce ai acest amestec, il poti folosi pentru a face un aluat de paine cu o aroma usor acida \u2013 datorita bacteriilor din starter.<\/p><p>Un starter de maia este cam ca un animal de companie: daca il hranesti in mod regulat si il mentii \u201efericit\u201d, va continua sa traiasca ani de zile \u2013 acest proces se numeste intretinerea starterului de maia. Dar daca il neglijezi prea mult timp, nu exista nicio garantie ca maiaua va supravietui sau ca va reveni \u201ela viata\u201d atunci cand ii vei acorda din nou atentie, asa ca va trebui sa incepi din nou de la zero!<\/p><p>In cazul in care te intrebi de unde poti cumpara un starter pentru maia, raspunsul este simplu: intreaba un cunoscut care-si prepara propria maia daca iti poate oferi o cantitate mica, pe care o vei putea hrani la randul tau si va creste. In cazul in care nu ai prieteni pasionati de paine, poti verifica grupurile de Facebook dedicate in care activeaza iubitorii de maia \u2013 unii dintre ei ar putea fi suficient de generosi pentru a-ti oferi din maiaua lor sau iti pot explica cum sa incepi singur!<\/p><p>Un lucru este cert: sa-ti faci propriul starter de maia este super usor, motiv pentru care iti recomand sa-l faci singur\/a \u2013 satisfactia este garantata! In cazul in care acest scenariu iti surade, iata tot ce ai nevoie pentru a-ti face un starter de maia:<\/p><h2 class=\"wp-block-heading\">Echipamente si ustensile necesare:<\/h2><ul class=\"wp-block-list\"><li>1 borcan mare (min. 800 ml)<\/li><li>1 lingura de inox<\/li><li>cantar de bucatarie cu sistem metric (grame)<\/li><\/ul><h2 class=\"wp-block-heading\">Ingrediente:<\/h2><ul class=\"wp-block-list\"><li>100 g faina integrala de secara sau faina integrala de grau<\/li><li>100g apa (la 28\u00b0C)<\/li><\/ul><p><em>Important: Toate cantitatile sunt exprimate in grame, chiar si pentru apa, asa ca asigurati-va ca utilizati un cantar de bucatarie. Nu este optional!<\/em><\/p><h2 class=\"wp-block-heading\">Pentru hranire (ziua 2 pana la 7):<\/h2><ul class=\"wp-block-list\"><li>100 g faina universala \/ zi<\/li><li>100 g apa (la 28\u00b0 C) \/ zi<\/li><\/ul><h2 class=\"wp-block-heading\">Instructiuni:<\/h2><p><strong>Ziua 1<\/strong><\/p><ol class=\"wp-block-list\" type=\"1\"><li>Pune borcanul gol pe un cantar si noteaza-i greutatea. Vei avea nevoie de acest numar mai tarziu.<\/li><li>Adauga 100 g de faina integrala de secara sau faina integrala de grau in borcan.<\/li><li>Adauga 100 g de apa in borcan \u2013 nici prea fierbinte, nici prea rece. Recomand apa calda la aproximativ 28\u00b0 C.<\/li><li>Folosind o lingura curata din otel inoxidabil, amesteca bine. Acopera cu un capac, dar nu-l inchide. Lasa borcanul la temperatura camerei pana a doua zi.<\/li><\/ol><p><strong>Ziua 2<\/strong><\/p><ol class=\"wp-block-list\" type=\"1\"><li>Arunca o parte din maia, lasand doar 100 g din ea in borcan. Poti face acest lucru cantarind borcanul plin, scazand greutatea borcanului si apoi aruncand suficienta maia astfel incat, in final, sa mai aveti doar 100 g din aceasta.<\/li><li>Nu arunca maiaua imatura pe care ai scos-o! Poti folosi excesul imediat pentru a face clatite sau lipii (mai jos am pregatit o lista de retete recomandate). Alternativ, pastreaz-o intr-o caserola sau in alt borcan etichetat si foloseste-o mai tarziu.<\/li><li>Pune borcanul cu 100g de maia pe cantar si adauga 100g apa.<\/li><li>Amesteca bine folosind o lingura curata din otel inoxidabil.<\/li><li>Adauga 100 g de faina alba universala. Amesteca din nou.<\/li><li>Acopera cu un capac, dar nu-l infileta. Lasa la temperatura camerei pana a doua zi.<\/li><\/ol><p><strong>Ziua 3-7<\/strong><\/p><p>Repeta procesul din ziua 2 pana ajungi in ziua 7.<\/p><p>Pana atunci, ar trebui sa ai un starter de maia matur. Daca, din orice motiv, aluatul nu devine inca \u201espumant\u201d asa cum ar trebui dupa cele 7 zile, mai continua inca cateva zile. Scoate cantitatea de care ai nevoie pentru reteta pe care planuiesti sa o faci.<\/p><p>Apoi, ia 100 g de starter si pune-l intr-un alt borcan curat si hraneste-l asa cum am explicat anterior, folosind 100g faina si 100g apa. Arunca excesul de maia sau foloseste-l pentru alte retete.<\/p><p><strong>Regula este simpla:<\/strong> vei pastra intotdeauna 100 g de maia matura si vei folosi sau vei arunca excesul.<\/p><p>Pentru a usura procesul de intretinere, acum este recomandat sa depozitezi borcanul cu maia in frigider. Seteaza-ti un reminder sa o hranesti o data pe saptamana. Si cam atat! Acum vei avea maia ani de zile, atata timp cat nu uiti sa o hranesti saptamanal!<\/p><h3 class=\"wp-block-heading\">Hranirea starterului pentru maia<\/h3><p><strong>Pentru fiecare hranire saptamanala:<\/strong> scoate borcanul de maia din frigider si arunca o parte din ea, pastrand doar 100 g. Hraneste-o cu 100 g de faina si 100 g de apa. Se lasa apoi la temperatura camerei timp de 8 ore pentru ca procesul de fermentare sa aiba loc, apoi se pune din nou la frigider.<\/p><h2 class=\"ch2 wp-block-heading\" id=\"12\">Retete pentru excesul de maia naturala<\/h2><p>Deci, ce poti face cu starterul in exces? Nici sa nu te gandesti sa-l arunci la cos; fa-ti timp si incearca o reteta in schimb!
