Facuti din texturat de soia si tofu afumat, cu un amestec aromat de usturoi, cimbru si ienibahar, sunt perfecti la gratar sau tigaie grill &#8212; atat de buni incat ii vor iubi si carnivorii.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><em>Pregateste aceasta reteta de mititei vegani la urmatorul gratar sau picnic si ii vei impresiona chiar si pe prietenii tai care nu sunt vegetarieni!<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu e prima oara cand am incercat sa fac o varianta vegana a popularilor mici romanesti. Am testat reteta asta de nenumarate ori si de fiecare data am adus imbunatatiri. Acum cred ca am ajuns la varianta perfecta &#8212; una care sa captureze gustul si textura specifice mititeilor, dar fara niciun ingredient de origine animala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul sta in combinatia dintre texturatul de soia hidratat si tofu afumat pasat grosier, care imita exact aspectul de &#8220;bucatele de grasime&#8221; din micii traditionali. Se foloseste in doua etape: jumatate (100 g) se hidrateaza in apa fiarta inainte de preparare, iar cealalta jumatate se adauga uscata. Aceasta combinatie da o textura mai complexa si mai interesanta mititeilor. Alege granule fine sau medii, nu fulgi mari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat (300 g)<\/strong> &#8212; contribuie la aroma afumata si la textura. Se paseaza grosier cu o furculita, nu piure, ci in bucatele mici neregulate care imita aspectul grasimii din micii clasici. Aroma de afumat este esentiala pentru gustul final, asa ca nu il inlocui cu tofu simplu daca vrei rezultatul autentic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium (2 linguri)<\/strong> &#8212; actioneaza ca liant natural, tinand mititei impreuna fara oua sau alt liant de origine animala. Psyllium absoarbe lichidele si creeaza o consistenta lipicioasa care impiedica desfacerea mititeilor la gratar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi (8 catei)<\/strong> &#8212; ingredient-cheie in orice reteta de mici! Opt catei poate parea mult, insa usturoiul se &#8220;topeste&#8221; in pasta si da acea aroma caracteristica si puternica pe care o asteptam de la mici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Carob &#8212; pudra de roscove (1 lingura)<\/strong> &#8212; ingredientul surpriza al acestei retete. Pudra de roscove adauga o usoara dulceata si o culoare bruna mai inchisa, care imita aspectul vizual al mititeilor clasici la gratar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele: cimbru uscat, ienibahar macinat, coriandru macinat, boia dulce<\/strong> &#8212; aceasta combinatie este cea care face diferenta si transforma pasta de soia si tofu intr-o mancare cu aroma tipic romaneasca. Acest pas este esential: psyllium absoarbe lichidele, pasta se intareste si mititei se formeaza mult mai usor si nu se desfac la gratar.<\/li>\n<li><strong>Unge-ti mainile cu ulei<\/strong> cand dai forma mititeilor &#8212; pasta e lipicioasa si uleiul impiedica sa se lipeasca de maini. De asemenea, unge-i cu un strat subtire de ulei inainte sa ii pui pe gratar sau in tigaie.<\/li>\n<li><strong>Gratarul sau tigaia grill trebuie sa fie bine incins<\/strong> inainte de a pune mititei. La temperatura mare se rumenesc frumos si nu se lipesc. Nu ii muta prea des &#8212; lasa-i sa se rumeneasca pe o parte inainte sa ii intorci.<\/li>\n<li><strong>Serveste cu mustar<\/strong>, asa cum se face traditional, si cu paine proaspata sau salata de varza.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>In loc de tofu afumat<\/strong> poti folosi tofu simplu combinat cu cateva picaturi de fum lichid (liquid smoke) sau cu 1 lingurita de boia afumata pentru a obtine aroma de afumat.<\/li>\n<li><strong>In loc de tarate de psyllium<\/strong> poti incerca 2-3 linguri de faina de in (seminte de in macinate) amestecate cu apa &#8212; actioneaza similar ca liant. Retine ca textura finala poate fi usor diferita.<\/li>\n<li><strong>Carob-ul poate fi omis<\/strong> daca nu il gasesti, insa mititei vor fi mai deschisi la culoare. Ca alternativa, 1 lingurita de pasta de rosii concentrata adauga atat culoare cat si un plus de savoare.<\/li>\n<li><strong>Variatie picanta:<\/strong> adauga 1\/2 lingurita de fulgi de ardei iute sau boia iute in locul (sau pe langa) boiei dulci pentru o varianta mai picanta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>La frigider:<\/strong> pasta de mititei vegani (neformata) se pastreaza la frigider pana la 2 zile. De fapt, cu cat sta mai mult in frigider, cu atat devine mai ferma si mai usor de modelat. Mititei gata formati (dar negatiti) pot sta la frigider pana la 24 de ore inveliti in folie alimentara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mititei gatiti<\/strong> se pastreaza la frigider intr-un recipient inchis pana la 3 zile. Se reincalzesc in tigaie grill sau la cuptor pentru a-si recapata textura crocanta pe exterior. Nu este recomandata reincalzirea la microunde deoarece devin moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>La congelator:<\/strong> mititei formati si negatiti se pot congela pe o tava (bucata cu bucata, sa nu se lipeasca) timp de 1 ora, dupa care se transfera intr-o punga de congelare. Se pastreaza pana la 2 luni. Se gatesc direct din congelator, la foc mediu, adaugand cateva minute in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele vegane cu textura de carne, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/carnati-de-post\/\">carnatii de post<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/burgeri-sloppy-joe-vegani\/\">burgerii Sloppy Joe vegani<\/a>. Iar daca vrei mai multe idei cu texturat de soia, arunca o privire la <a href=\"https:\/\/gourmandelle.com\/ro\/paste-bolognese-vegane-de-post\/\">pastele bolognese vegane de
